<p>從細到大都好鍾意食滷水嘅食物，滷水雞翼、鵝掌翼、乳鴿、滷水蛋、滷水牛展……結婚後首年就嘗試自製滷水，不斷改良，最後有一個獨特嘅滷水食譜。</p>



<p>我相信其實唔同嘅家庭係有唔同嘅滷水食譜，而我今日就分享一下我哋屋企嘅滷水食譜啦！</p>



<p>大家都知道我係鍾意做泰菜，近幾年嘅滷水加入咗少少泰國菜嘅材料，例如香茅、南薑、芫荽根、新鮮沙薑，令到滷水嘅層次更豐富！</p>

<p>星期天的早上，非常忙碌，但是外面下着大雨，還是在家煮一點東西吃吧。在雪櫃裏發現一包前天買的豬軟骨，就決定用thermomix來煮，雖然用了這部玩具不是很多次，也未能說用得很純熟，得心應手。</p>



<p>但是我覺得這部玩具，用來做炆的菜色，實在是10分出色。加上只要把材料放進就能做好，慳水慳力，對於每個星期天都很忙碌的我實在是很好的幫手。</p>



<p>這道日式豬軟骨，只用上了基礎的日式醬料，就能做出日式餐廳的味道，小朋友都說非常好吃。</p>

<p>材料：豬軟骨1斤、蒜頭三粒、蔥段適量<br>日式醬汁：味醂50ml、清酒50ml、生抽3湯匙、椰糖一茶匙、麻油少許<br>其他：芝麻少許</p>

<p>豬軟骨以跑活水的方式處理後洗乾淨（以小美處理的話，速度4、15分鐘、溫度50度）</p>

<p>蒜頭放在主杯中，以速度5，3秒切碎，把蒜粒盡量移動主杯底部</p>

<p>加入少許油，加入蔥段，以速度1，返匙、溫度100度，時間3分鐘，爆香蒜頭<br></p>



<p>放入豬軟骨，及日式醬汁材料，以匙羹速度（反匙）、溫度veroma，時間25分鐘烹調</p>

<p>外出吃飯的時候，如果到上海的餐館，很多時候都會點砂鍋雲吞雞這一道菜色。喜歡它既是湯、又是餸。而砂鍋雲吞雞的靈魂在於湯底，濃濃的雞湯美味非常！在家做砂鍋雲吞雞，可以非常考究，用雞殼熬湯來做，懶惰的話則可用現成的清雞湯來做。那麼當然用雞殼來做的雞湯，會美味得多！</p>



<p>由於我常常都做冬蔭功，所以家中有很多湯底的存貨。當然做冬蔭功湯的雞湯底，煮做砂鍋雲吞雞的會有一點點不同。就在這裏分享一下如何做簡易的雞湯底給大家，放假有空的時候可先做定雞湯底放在冰格，有需要時就攞出來用！至於雲吞的食譜，周稍後分享給各位，因為今天沒有做雲吞，下次做雲吞的時候再寫食譜給大家。</p>

<p><br>2.把雞殼放進已煮滾的水，加入金華火腿，以中火煲兩小時，隔掉了油脂及肉碎即成雞湯底，可按口味加入適量的食鹽</p>

<ol start="3"><li>娃娃菜洗淨切好，新鮮雞洗淨以食鹽醃最少兩小時</li><li>在鍋中加入金華火腿，鮮雞湯底煮滾，加入把半隻雞放進，待雞湯煮滾後，蓋上蓋子，計10分鐘。10分鐘後把雞反轉及湯煮滾，蓋上蓋子，再計10分鐘。</li></ol>
