<p>唔講大家可能唔知道，細細個嘅時候屋企人係開餅舖，我對整餅其實冇乜興趣，因為細個嘅時候成日見到屋企人晨早流流起身開舖，搞到夜一夜先返屋企，都幾辛苦！但是舖頭爸爸做嘅菠蘿包、酥皮蛋撻真係好好味，麻麻哋整餅嘅我，最叻就係去舖頭偷嘢食囉！</p>



<p>至於鳳梨酥呢，舖頭就冇賣，但係舖頭師傅話過俾我知，整鳳梨酥唔容易，就咁炒個餡分分鐘都搞幾個鐘頭。</p>



<p>以前做鳳梨酥個餡，真係要用細火慢慢煮、慢慢炒，直到年前兩年前買咗一個小美，一直都未試過用來做鳳梨酥，但最近見好多台灣鳳梨，就試吓做啦！估唔到用小美來做鳳梨酥係非常方便，以下嘅食譜有用小美做嘅，也有之前用炒嘅方法，大家睇吓應該跟邊個會好啲！另外我鍾意個皮薄啲，個餡多啲，所以兩個鳳梨做出出嚟只有20個啊🤣🤣</p>

<p>鳳梨餡材料（減糖版本）</p>



<p>台灣鳳梨兩個（大約850克一個）、白糖100g、麥芽糖3湯匙、雲呢拿香油1茶匙、檸檬汁2湯匙</p>

<p>酥皮材料（20個55g 一個份量）</p>



<p>低筋麵粉400g（需要先過篩）、無鹽牛油250g、糖粉100g、奶粉50g、蛋黃3個、牛奶少許（按份的乾濕度加入）</p>

<p>餡料製作步驟（小美版本）</p>



<p>1. 台灣鳳梨先去除外皮及菠蘿心的位置切件，把菠蘿放進小美中，以速度6，15秒打碎</p>

<p>2. 加入其他鳳梨餡材料，以120度溫度、反匙煮45分鐘，再以varoma 煮大約20分鐘直至收汁即可（視乎菠蘿的水份而定）</p>

<p>餡料製作步驟（使用炒鍋）</p>



<p>1. 台灣鳳梨先去除外皮及菠蘿心的位置，切細粒之後放進攪拌機，攪拌成碎後過篩以過濾菠蘿汁（盡量把菠蘿汁過濾以縮短炒煮的時間）</p>



<p>2. 把鳳梨泥放進炒鍋，已中慢火慢煮（需要不停攪拌），直至釋出水份及變杰，加入白糖及麥芽糖，拌勻後再試味，再炒至即金黃色即可</p>



<p>酥皮製作（小美版本）</p>



<p>1. 牛油在室溫放軟，加入糖粉以5速度，15秒攪拌成乳白色</p>

<p>2. 加入其他所有的材料（牛奶除外），以5速度，15秒再攪拌好，此時酥皮應該未夠足夠嘅水份，可按照需要加入牛奶拌好（加入牛奶後以速度5，10秒拌好再查看），把做好的鳳梨痞放入雪櫃雪45分鐘</p>

<p>1. 牛油在室溫放軟，加入糖粉搓混成乳白色</p>



<p>2. 加入糖粉及低筋麵粉，慢慢搓混，在加入蛋黃及牛奶，直至酥皮不黏手，顆粒完整混合為可，把做好的鳳梨酥皮放入雪櫃雪45分鐘</p>



<p>製作鳳梨酥</p>



<p>1. 焗爐先預熱180度</p>



<p>2. 量度鳳梨餡的份量（20g 一個）及鳳梨皮的份量（25g一個）</p>
