<p>Q:滷水要如何存放?</p>



<p>A: 滷水使用後，要先用隔篩過濾肉碎，滷水放涼後如果在未來三至四天不會使用的話，我會把其放在冰箱。每兩個禮拜取出，加熱後放涼，再放回冰箱即可。當然，每個星期使用的話，滷水的味道會更好。</p>



<p>Q: 滷水要如何才能保持其品質</p>



<p>A: 每次煮食後要把肉碎過濾乾淨，另外在每一次使用滷水之前，把上層的油分以小匙除去。放進冰格前要確保滷水放涼</p>



<p>Q: 滷水越用越小要如何處理</p>



<p>A: 可以按情況加水（如果太鹹）或者加頭抽（如果味道不夠），加入頭抽後需按比例加入冰糖及香草材料，以確保滷水的味道維持</p>



<p>Q: 滷水的保存期如何</p>



<p>A: 只要正確使用滷水，滷水可以用上好多年，我家的滷水已經用咗10幾年啦！味道會越嚟越好</p>



<p>Q: 還有其他注意的事項嗎？</p>



<p>A: 如果要滷肉類，請先把肉類汆水後洗乾淨才放進滷水，因為肉類的血水帶有腥味，會影響滷水的質素。</p>



<p>如果要滷豆腐，最好把滷水取出來用，由於豆腐會令滷水容易變味，所以分開來用比較好！</p>

<p>在楊屋道街市見到有新鮮嘅牛肚賣，仲要係我最鍾意嘅金錢肚！即刻買咗佢，返屋企用自製嘅滷水汁嚟整。</p>



<p>牛肚嘅精髓在乎過自製滷水汁，慢慢炆入晒味好好味！新鮮牛肚始終好食過急凍嘅好多，另外自己洗亦都放心啲，因為牛肚屬於內臟，點都要洗得乾淨啲先好食嘅！</p>

<p>到日式餐館吃飯，女兒和兒子都喜歡吃日式汁燒牛仔骨，喜歡其甜甜的味道，外面的餐館用上炭燒的方法去煮，更加添了焦香的味道。</p>



<p>今天早上，小朋友返學前告訴我說午餐要吃日式汁燒牛仔骨，叫我試試煮。好吧就試一試！其實也不難，我相信這道菜式很多小朋友都會喜歡，大家又試吓啦！</p>

<p>大家都知道我好鍾意食蟹：花蟹、長腳蟹、松葉蟹、肉蟹、膏蟹、奄仔蟹！樣樣蟹都鍾意食。</p>



<p>今日海鮮檔嘅老闆送俾我幾隻紅花蟹，唔好睇佢細細隻，其實都非常之鮮甜！咁啱屋企有一個伊麵喺度，再買少少芽菜同草菇返去，快快脆脆整個伊麵做晚餐😄</p>



<p>加了蛋白，令到蟹肉嘅質感更加好味，自己做嘅蟹肉伊麵唔止係新鮮，仲要啖啖肉！非常美味</p>

<p>材料：紅花蟹2-3隻（視乎大小）、芽菜少許、蛋白一隻、雞湯200毫升、蔥段適量、草菇4兩（洗乾淨後對半切開）、粟米粒少許、大伊麵一個、蒜頭3-4粒（拍扁）、木之芽用作裝飾</p>

<p>步驟</p>



<p>1. 紅花蟹洗乾淨後，蓋向下腳向上，蒸13分鐘，待涼後拆肉（蟹殼留用，今次我姐姐幫手拆肉，只留咗蟹蓋）</p>



<p>2. 把蟹殼沖洗乾淨，放入氣炸鍋中，以200度氣炸5分鐘</p>



<p>3. 取出後把蟹殼及雞湯放在小鍋中至滾，再轉細火煮10分鐘，即成為蟹高湯</p>

<p>4. 伊麵放滾水中煮開，再用水喉水洗淨</p>

<p>5. 在炒鍋中加入2湯匙的油，爆香蒜頭，加入草菇炒香，加入粟米粒及蔥白</p>

<p>6. 放入伊麵後加入蟹高湯約50ml，煮一會兒，加入鹽及魚露調味後加入青蔥段拌勻</p>

<p>7. 把炒鍋洗淨，加入銀芽炒香，加入蟹肉後再加入少許鹽及魚露調味，關火候注入蛋白即可</p>

<p>8. 在伊麵上加入三文魚子、蟹蓋及木之芽就可以享用啦</p>

<p>話說我第一個工人姐姐姐姐是印尼人，煮嘢食都好叻！嗰陣時啲小朋友仲好細，所以煮食通常交俾姐姐去處理。而佢整過咁多樣嘢入面，最好味嘅就係巴東牛肉！嗰陣時冇好認真咁跟佢學，但臨走之前叫佢寫低咗食譜俾我，最近比較得閒終於跟住做，味道比起用現成嘅巴東牛肉醬好味好多多多多多多多多！再加上用新鮮鮑魚腩牛肉，炆得耐都唔會融！正到癲！</p>



<p>當然自製巴東牛肉需要好多香料同配料，係好麻煩嘅！但係食到咁美味既牛肉，煩d都抵啦！至於香料可以喺九龍城城南道一間香料店買得晒，要食好嘢都係唔懶得啦！</p>

<p>主材料：牛腩2斤（我用鮑魚腩），切成大件</p>



<p>香料材料(需攪碎）：石栗45g、白胡椒粒1.5茶匙、芫荽籽1茶匙、蒜頭60g、薑20g、豆蔻1粒、紅蔥頭70g、沙薑60g、乾指天椒2隻（浸軟去籽）、新鮮指天椒（大隻）一隻（去籽）</p>



<p>香料材料（不需要攪碎）：八角2粒、丁香4粒、檸檬葉6片、月桂葉6片、肉桂1條（細）、黃薑粉2茶匙、香茅4條（拍扁，切大段）、沙林葉2塊、油150g</p>



<p>調味料： 椰奶800ml、ABC甜豉油100g、椰糖兩茶匙、鹽兩茶匙</p>

<p>步驟</p>



<p>1. 把所有材料洗乾淨，需要去皮的香料先去皮，全部需要抹乾備用</p>



<p>2. 把牛腩放在室溫水中，以跑活水的形式處理後洗乾淨</p>

<p>3. 乾辣椒先浸軟，後切段、大隻紅辣椒去籽後也切段、香茅略拍後切大段</p>



<p>4. 需要攪碎的香草材料（白胡椒粒、芫荽籽、豆蔻)以攪拌機攪碎/或以石盅盅碎</p>



<p>5. 再加入石栗以攪拌機均勻攪碎/或以石盅盅碎</p>



<p>6. 加入其他需要攪碎的材料（紅蔥頭、蒜頭、薑、沙薑、辣椒、乾辣椒）均勻攪碎（如沒有攪拌機的話，需要先把以上材料用砧板切碎，再用石盅盅碎）</p>

<p>7. 在鍋中加入油，爆香所有以攪拌的香草材料及不需要攪拌的香草材料（我用的是小美，所以直接把油放進小美中， 以100度15分鐘及0.5度爆香材料），加入椰奶及其他調味料，以中火煮滾，再用小火炆約1小時-個半小時</p>

<p>8. 如果想慳一點時間，則使用高速鍋，只需要40分鐘就可以</p>



<p>9. 完成後的巴東牛肉，應該有一層清澈的油在牛肉及汁的表面，把清澈的油倒去就可以享受美味的牛肉了！</p>

<p>唔講大家可能唔知道，細細個嘅時候屋企人係開餅舖，我對整餅其實冇乜興趣，因為細個嘅時候成日見到屋企人晨早流流起身開舖，搞到夜一夜先返屋企，都幾辛苦！但是舖頭爸爸做嘅菠蘿包、酥皮蛋撻真係好好味，麻麻哋整餅嘅我，最叻就係去舖頭偷嘢食囉！</p>



<p>至於鳳梨酥呢，舖頭就冇賣，但係舖頭師傅話過俾我知，整鳳梨酥唔容易，就咁炒個餡分分鐘都搞幾個鐘頭。</p>



<p>以前做鳳梨酥個餡，真係要用細火慢慢煮、慢慢炒，直到年前兩年前買咗一個小美，一直都未試過用來做鳳梨酥，但最近見好多台灣鳳梨，就試吓做啦！估唔到用小美來做鳳梨酥係非常方便，以下嘅食譜有用小美做嘅，也有之前用炒嘅方法，大家睇吓應該跟邊個會好啲！另外我鍾意個皮薄啲，個餡多啲，所以兩個鳳梨做出出嚟只有20個啊🤣🤣</p>

<p>1. 台灣鳳梨先去除外皮及菠蘿心的位置，切細粒之後放進攪拌機，攪拌成碎後過篩以過濾菠蘿汁（盡量把菠蘿汁過濾以縮短炒煮的時間）</p>



<p>2. 把鳳梨泥放進炒鍋，已中慢火慢煮（需要不停攪拌），直至釋出水份及變杰，加入白糖及麥芽糖，拌勻後再試味，再炒至即金黃色即可</p>



<p>酥皮製作（小美版本）</p>



<p>1. 牛油在室溫放軟，加入糖粉以5速度，15秒攪拌成乳白色</p>

<p>三隻龍蝦仔加埋都成一斤10兩，個身用嚟整龍蝦伊麵，咁個頭當然係要用嚟整龍蝦湯啦，加埋尋日未食晒嘅半盒生蠔落去煮！鮮味到暈。</p>

<p>材料：日本直送螢光魷魚一盒、雷筍一條、木之芽少許、三文魚子適量、紫蘇花（可省）、日本珍珠米兩杯</p>



<p>煮飯汁料：鰹魚汁100ml、水2.5杯、日本豉油兩湯匙、味醂兩湯匙、料理酒一湯匙</p>



<p>步驟</p>



<p>1. 螢光魷魚洗淨後，以80度蒸3分鐘，或隔水蒸2分鐘，取出後放涼</p>

<p>2. 以小夾把魷魚的眼、嘴及軟骨除去，洗淨瀝乾水備用</p>

<p>3. 雷筍去除外皮，只要最嫩的部份切粒，放進滾水煮3分鐘，取出放涼備用</p>



<p>4. 日本米洗乾淨後，先浸水半小時，再瀝乾水備用</p>



<p>5. 在小鍋中煮滾煮飯汁料備用</p>



<p>6. 在陶瓷鍋或鑄鐵鍋中加入珍珠米、雷筍粒及螢光魷魚，再加入兩杯煮飯汁料，蓋上蓋子直至冒煙，轉中小火煮10分鐘，再焗5分鐘</p>

<p>中國人很重視過冬及農曆新年，每逢過冬及農曆新年都會聚首一堂，談天說地。今年的冬至及農曆新年都在疫症中渡過，用餐的選擇少了，很多朋友都會選擇盆菜。一來因為方便，二來菜式選擇很多，一盤過夠晒成家食。</p>



<p>以往我也會幫襯外間的盆菜，但是就是吃不到心目中的味道。我很喜歡吃海鮮，但是海鮮盆菜的選擇較少，有時海鮮的質素也不太理想，加上外間的盆菜一般也有豬皮、魷魚、魚球等等&#8230;&#8230;這些我不太喜歡吃的材料，所以今年做冬決定自家製！選擇最喜歡吃的材料，用上無添加的醬油，每種食物的鮮味仍在，一鍋上，暖笠笠，夠晒一家人吃！</p>



<p>今年過冬大家也可以選擇自製盆菜，就跟我下面個食譜整啦！呢個盆菜我只係用咗一個半鐘頭做，係咪好快呢❤️❤️❤️</p>

<p>材料</p>



<p>蔬菜類：</p>



<p>紹菜一個、西蘭花一個、日本大根一條</p>



<p>海鮮類</p>



<p>大虎蝦二至四隻、南非鮑魚（4頭）一斤四隻、生曬金蠔6隻、花螺半斤</p>



<p>肉類</p>



<p>有機三黃雞半隻、鵝掌四隻、鵝翼8隻</p>



<p>其他</p>



<p>枝竹$10、日本花菇8隻、魚蛋10粒</p>



<p>虎蝦調味：茄汁一湯匙、生抽少許、黑醋一茶匙、糖一茶匙、紅蔥頭兩粒（一開四）、洋蔥1/4個（切件）</p>



<p>金蠔製作材料：蔥段及薑絲適量、紹興酒1瓶蓋、蜜糖適量</p>



<p>花螺製作材料：柱侯醬一茶匙、豆瓣醬一茶匙、蔥段少許、紅蔥頭兩粒（一開4）、薑片兩片、蠔油一茶匙、生抽一茶匙、糖少許</p>



<p>步驟</p>



<p>蔬菜處理</p>



<p>1. 紹菜洗乾淨切段，西蘭花洗乾淨把花切下來、日本大根去皮後以滾筒式的方法切件</p>



<p>2. 在鍋中加入兩片薑片，爆香後加入紹菜，加入一湯匙蠔油及少許糖煮大約3至4分鐘，盛起備用</p>



<p>3. 西蘭花灼熟，盛起備用</p>



<p>4. 日本大根放在雞湯中，以中慢火煮30分鐘至林</p>



<p>海鮮處理</p>



<p>1. 大虎蝦去除沙囊及蝦腸，抹乾水。放入已加熱的鍋中，以中小火煎香，加入乾蔥頭兩粒及洋蔥件爆香，加入茄汁、黑醋、生抽及糖，蓋上蓋子，煮1至2分鐘</p>

<p>4. 花螺洗乾淨，放入滾水中，煮6至7分鐘，取出。在炒鍋中加入兩片薑、紅蔥頭及蔥白，爆香後加入柱侯醬、豆瓣醬、蠔油、生抽及糖，加入花螺及兩湯匙的水，蓋上蓋子煮2分鐘即成</p>

<p>一向也很喜歡吃花甲，喜歡其海水味及花甲肉帶淡淡的甜味。以中式的方法來說，我最愛的還是以豉椒的方法來煮，除了突顯花甲的鮮味以外，還為他加添了一份獨特的味道。加上製法容易，宴客的時候也不失體面，大家如果有朋友來家食飯，可以考慮煮這個菜式呢！</p>

<p>材料：花甲一斤、青椒、紅椒及黃椒各半隻（切件）、蔥段適量、蒜頭四粒（切碎）、豆豉一茶匙（切碎）、指天椒片適量（不吃辣可省）、洋蔥半個（切件）</p>



<p>調味料：花雕酒一湯匙、蠔油半湯匙、生抽一茶匙、糖少許、水少許</p>
