<p>還記得剛結婚的時候，沒有每天晚上煮晚餐的習慣。一來當時工作很忙，再者是因田住在奧運站附近，商場裡有很多不同的餐廳可試。其中一間中菜餐廳，她的砂鍋雲吞雞做得特別出色，香濃的湯底配上生熟剛好的雞塊及彈牙的雲吞，要一份兩人分，再加一個小菜，剛剛好。</p>



<p>到加拿大旅行前再度光臨小店，發現質素沒有以前那麼好，究竟是質素差了？還是我的要求提高了？既然吃不回當年的質素，就自己做做看！</p>



<p>自家製的鮮雞湯砂鍋雲吞雞，非常足料，用上自製的雲吞及鮮雞湯，每食一口，幸福咁渾然而生😌</p>

<p>好耐都未試過星期六放假，由於上個星期實在太攰太攰，所以今個星期六同禮拜日都係接好少嘅order！休息就寫個食譜俾大家啦，大家好鍾意嘅青咖喱雞！</p>



<p>喺泰國食青咖喱雞成日都好辣，一係雞肉就好硬，自己煮嘅青咖喱雞，可以選擇最新鮮嘅泰安雞，想幾辣可以自己話事！我鍾意加啲金不換葉落去，味道提升不少，就算唔食辣嘅朋友都食得到！</p>

<p>喜歡到泰國餐館吃飯的朋友，往往都很愛吃菠蘿炒飯，加入了菠蘿粒的炒飯帶點甜甜酸酸的味道，使人份外開胃。加入了腰果及肉鬆的菠蘿炒飯，為炒飯加入脆脆的口感。今次把鹹蛋黃也加入在菠蘿炒飯中，愛其與眾不同鹹鹹香香的味道。菠蘿炒飯其實不難做，最麻煩就是把新鮮的菠蘿起肉。在外面吃的菠蘿炒飯一般也會用罐頭菠蘿，味道當然比不上用新鮮菠蘿及新鮮雞髀肉啦！星期六日趁着有空的時候大家也是試下煮啦！</p>

<p>材料：菠蘿一個、去骨雞髀兩隻、鹹蛋一隻、雞蛋一至兩隻、腰果適量、肉鬆適量、米三杯、蔥花適量</p>



<p>雞肉醃料：生抽一茶匙、魚露少許、糖少許、麻油少許</p>

<p>在處理菠蘿的同時把米飯煮好，我比較喜歡用新鮮飯煮炒飯，米和水的比例是3杯米：兩杯半水</p>

<p>把煮好的米飯及鹹蛋黃放在炒鍋中炒香，在旁邊加入少許油，放入雞蛋，注意不要馬上混合否則飯會變得很林，要待雞蛋稍為煎成荷包蛋形狀，快手兜勻，今次我下了兩隻雞蛋，要逐隻煎好，再兜勻不要心急啊！</p>

<p>加入已經爆香的雞肉，記着不要把油也到落去啊後加入鹽、生抽及魚露少許試味後加入蔥花，把炒飯放入菠蘿中，上面加入肉鬆及炸香料的腰果即成</p>

<p>昨天到街市看到有很大隻的嘉美老雞賣，價錢比一般嘉美雞還要便宜，馬上買來了半隻，在買來一斤多的南非鮑魚，烹調粥了嘉美老雞鮑魚湯，進補一下。</p>



<p>南非鮑魚雖然煲了個多小時，但吃起來還是非常稔滑，而嘉美老雞呢？則鮮甜無比，有時候寵下家人、寵下自己都是很開心的事。</p>

<p>嘉美老雞先去除雞皮，斬件後以跑活水的方式處理，洗淨備用（今次我用了小美，以50度溫度，15分鐘，速度四去處理，也10分乾淨）</p>

<p>南非鮑魚洗刷乾淨，備用</p>



<p>在湯煲中加入4.5升的水煲滾，把所有材料放進，先以中火煲45分鐘，再以大火煲45分鐘，加入少許鹽即可</p>

<p>外出吃飯的時候，如果到上海的餐館，很多時候都會點砂鍋雲吞雞這一道菜色。喜歡它既是湯、又是餸。而砂鍋雲吞雞的靈魂在於湯底，濃濃的雞湯美味非常！在家做砂鍋雲吞雞，可以非常考究，用雞殼熬湯來做，懶惰的話則可用現成的清雞湯來做。那麼當然用雞殼來做的雞湯，會美味得多！</p>



<p>由於我常常都做冬蔭功，所以家中有很多湯底的存貨。當然做冬蔭功湯的雞湯底，煮做砂鍋雲吞雞的會有一點點不同。就在這裏分享一下如何做簡易的雞湯底給大家，放假有空的時候可先做定雞湯底放在冰格，有需要時就攞出來用！至於雲吞的食譜，周稍後分享給各位，因為今天沒有做雲吞，下次做雲吞的時候再寫食譜給大家。</p>
