<p>今天早早就起來幫老公做少少野，做完嘢都只係九點幾，所以就去街市閒逛一下。突然醒起好耐冇食過泰式雞肉絲湯金邊粉，就即刻買來一包有機嘅雞胸肉。回家後馬上準備製作金邊粉。</p>



<p>返到屋企之後先醒起唔記得咗買雞肉丸，咁就不如自己做雞肉丸啦！自己製造嘅雞肉丸當然冇出邊買嘅咁彈牙，但無添加非常好食！加埋自家製作嘅雞湯底，去唔到泰國旅行回味一下都好！</p>

<p>材料：有機雞胸200 g、泰國椰菜苗適量、金邊粉200 g、銀芽適量（可省）</p>



<p>雞湯材料：香茅四枝、南薑兩至三片、芫荽跟六至八條、紅蔥頭兩至三粒、蒜頭五至六粒、雞湯2公升、魚露及生抽適量</p>



<p>雞肉丸材料：雞胸300g、青蔥段少許、洋蔥¼個、鹽三份一茶匙、雞蛋半隻、生粉適量</p>



<p>蒜油材料：蒜粒六至八粒（切碎）、生油兩湯匙</p>

<p>雞湯底製作步驟</p>



<p>1. 香草材料以白鑊炒香，加入雞湯煮滾，細火煲15至20分鐘，加入少許魚露及生抽調味即可</p>

<p>雞肉丸製作步驟</p>



<p>1. 雞肉切件，放在攪拌器中絞碎雞肉，加入青蔥段及洋蔥繼續絞碎，加入半隻雞蛋（我用thermomix, 速度六，時間1分鐘，把所有東西絞碎）</p>

<p>2. 使用thermomix的dough function， 加入鹽及少許生粉，把雞膠打3分鐘。</p>



<p>3. 如果沒有攪拌機的話，可以用砧板把雞肉切碎，加入切碎了的青蔥及洋蔥，順時針攪拌1分鐘，再加入雞蛋半隻，順時針攪拌1分鐘，加入少許生粉，繼續攪拌至成膠</p>

<p>4. 以虎口位唧出雞肉丸</p>

<p>5. 如果雞肉丸的表面不光滑，可加少許水份在表面，使其光滑</p>

<p>1. 把切碎了的蒜頭放在加熱了的油中半煎炸至香脆即可</p>

<p>雞肉絲製作</p>



<p>1. 200g雞胸洗乾淨後一開為二，放入煮滾了的湯中，關上火，蓋上蓋子，焗8分鐘至熟</p>
