<p>昨天因為有工作的緣故，所以中午在餐廳吃，突然想吃日本餐，就選了一間日本餐廳，要了一份日式照燒雞扒定食。懷着期盼的心情想吃美味的雞扒，怎知道菜式一上枱時，一看就知道雞扒應該不太好吃😩😩😩😩，就吃一口試試看，果然不出所料是雪藏味極濃的雞扒，感覺中伏了😩😩😩😩😩，只吃了兩口雞扒及一碗白飯🥺🥺🥺🥺。然後到街市買材料，還是掛念着美味Juicy在東京吃的日式照燒雞扒☹️☹️☹️，最後決定自己煮，希望尋回那款外脆內Juicy，鮮味的日式照燒雞扒！</p>



<p>所以昨天是連續兩餐吃了雞扒。自己做的照燒雞扒，用上新鮮有機三黃雞，雖然不便宜，但非常美味！加上製法簡單，大家也一定會成功！只要根據我提供的時間及方法，一定一定會成功的！</p>

<p>材料：新鮮雞髀三隻（可請雞檔去骨，或者自行去骨）</p>



<p>雞扒醃料：鹽少許、清酒一茶匙</p>



<p>照燒汁材料：日本豉油10ml、清酒20ml味醂20 ml、糖一茶匙</p>



<p>其他：白芝麻適量、紫菜絲少許</p>



<p>步驟：</p>



<p>1. 新鮮雞髀去骨後，用剪刀把脂肪剪去</p>

<p>2. 在雞扒肉的位置𠝹上淺刀痕</p>

<p>3. 在雞扒的皮部插上小孔（以防止皮膨脹及使油分容易排出）</p>

<p>4. 用雞扒醃料醃最少30分鐘</p>



<p>5. 燒熱炒鍋，加入少許油（我用油脂分離鍋沒有使用任何油）在醃料中取出雞扒抹乾，雞皮朝下，先用中火煎煮1分30秒，再調細火，煎煮6分鐘</p>

<p>6. 反轉雞扒，以中小火再煮3分鐘</p>

<p>7. 以廚房紙抹去所有的油份</p>

<p>8. 加入照燒雞扒汁，以小火煮2分鐘</p>
