<p>中學時期嘅其中一個回憶係同屋企人返大陸，嗰陣時碧桂園有一個單位，放假嘅時候成日都返去休息吓同埋食吓嘢。而喺碧桂園嘅附近有一間餐廳，非常好味！最出名是其陳村粉，無論係蒸定係炒都做得非常出色！</p>



<p>前幾天路過街市，見到有新鮮嘅陳村粉，馬上買來自己整！陳村粉味道較淡，需要比較濃既調味。我自己則偏向鮮味嘅陳村粉，所以用雞油同埋蟹來調味就最啱啦！加埋昆布同埋蝦米仔，鮮味也。</p>

<p>大家都知道我很喜歡吃黃咖喱炒蟹，也很喜歡做黃咖喱炒蟹，在泰國餐館吃的黃咖喱炒蟹一般都是用大肉蟹。大肉蟹肉質比較鮮甜，加上大大的蟹鉗，非常吸引。</p>



<p>但我煮了無數的黃咖喱炒蟹之後，卻發現使用膏蟹煮黃咖喱炒蟹更好味。原因膏蟹帶有橙色的膏，帶點鹹蛋的味道，為黃咖喱汁增加了一點層次。</p>



<p>可是使用膏蟹的話，也同時有一個問題，就是橙色的蟹膏會變得很硬，口感有點不好。</p>



<p>為了改善這個問題，上星期創作了改良版的黃咖喱炒膏蟹。先把橙色的蟹膏取出，再把蟹身氣炸，醬汁煮到差不多的時候才把橙色的膏加進去！那樣就可防止蟹膏過分煮，也不會存在蟹膏變硬的問題。</p>



<p>這可是我吃過最好吃的黃咖喱炒蟹呢！</p>

<p>材料：膏蟹1隻（約斤半）、洋蔥1個、蔥適量、芹菜適量、蒜頭2粒、紅辣椒一隻、黃咖哩粉1.5 湯匙</p>

<p>步驟：</p>



<p>1. 膏蟹洗淨斬件，取出橙色膏，把橙色膏放進熱水內，蟹件沾上粟粉，半煎炸的方式煮至九成熟</p>

<p>2. 如用Af鍋則在蟹肉上撲上生粉後噴油，以200度炸12分鐘，上途反轉一次</p>

<p>3. 洋蔥切大塊、蔥及芹菜切段、蒜頭切細粒、紅辣椒斜切成片</p>

<p>5. 黃咖哩粉以白鑊炒香、加入適量油爆香後加入蒜粒</p>



<p>7. 放入洋蔥略爆香及後加入炸香了的蟹件</p>



<p>8. 加入汁料略煮（如醬汁太杰可按需要加入雞湯），再加入橙色蟹膏煮2分鐘左右</p>
