<p>大家都知道我好鍾意食蟹：花蟹、長腳蟹、松葉蟹、肉蟹、膏蟹、奄仔蟹！樣樣蟹都鍾意食。</p>



<p>今日海鮮檔嘅老闆送俾我幾隻紅花蟹，唔好睇佢細細隻，其實都非常之鮮甜！咁啱屋企有一個伊麵喺度，再買少少芽菜同草菇返去，快快脆脆整個伊麵做晚餐😄</p>



<p>加了蛋白，令到蟹肉嘅質感更加好味，自己做嘅蟹肉伊麵唔止係新鮮，仲要啖啖肉！非常美味</p>

<p>材料：紅花蟹2-3隻（視乎大小）、芽菜少許、蛋白一隻、雞湯200毫升、蔥段適量、草菇4兩（洗乾淨後對半切開）、粟米粒少許、大伊麵一個、蒜頭3-4粒（拍扁）、木之芽用作裝飾</p>

<p>步驟</p>



<p>1. 紅花蟹洗乾淨後，蓋向下腳向上，蒸13分鐘，待涼後拆肉（蟹殼留用，今次我姐姐幫手拆肉，只留咗蟹蓋）</p>



<p>2. 把蟹殼沖洗乾淨，放入氣炸鍋中，以200度氣炸5分鐘</p>



<p>3. 取出後把蟹殼及雞湯放在小鍋中至滾，再轉細火煮10分鐘，即成為蟹高湯</p>

<p>4. 伊麵放滾水中煮開，再用水喉水洗淨</p>

<p>5. 在炒鍋中加入2湯匙的油，爆香蒜頭，加入草菇炒香，加入粟米粒及蔥白</p>

<p>6. 放入伊麵後加入蟹高湯約50ml，煮一會兒，加入鹽及魚露調味後加入青蔥段拌勻</p>

<p>7. 把炒鍋洗淨，加入銀芽炒香，加入蟹肉後再加入少許鹽及魚露調味，關火候注入蛋白即可</p>

<p>最近都買到新鮮嘅海蟹，拆咗肉之後用來整意粉，加上日本直送嘅螢光魷魚同埋三文魚子，配合西式同日式嘅香草，味道不錯！就算返工嘅朋友都可以準備豐富又新鮮嘅晚餐！</p>

<p>材料：紅蟹三隻（拆肉）、螢光魷魚（半盒）、三文魚子50g、淡忌廉80ml、青檸1/3個、新鮮粟米粒少許、洋蔥¼個（切粒）、蒜頭四粒（切細粒）、紅蔥頭一個（切細粒）、意粉150g(按包裝煮至八成熟）</p>



<p>香草材料：西式刁草一棵、西式番茜一棵、日本大蔥一條（全部切碎）日本木之芽少許、車厘茄六粒（一開2）</p>



<p>調味料：海鹽適量、魚露少許、白酒少許</p>

<p>步驟</p>



<p>1. 在炒鍋中加入油，燒滾後加入洋蔥粒、蒜頭粒及紅蔥頭粒炒香</p>



<p>2. 加入蟹肉略炒，再加入白酒炒香，加入新鮮粟米粒、意粉及淡忌廉煮一會</p>



<p>3. 加入香草材料（木之芽除外）拌勻後試味至合適</p>



<p>4. 在上面放上三文魚子及木之芽即可</p>

										<content:encoded><![CDATA[<p>最近忙着外送服務，今晚完成30多人份的外送後，要對自己及家人好一點。在相熟的海鮮檔買來一隻兩斤左右的加拿大珍寶蟹，在處理完外送服務後，用了半小時拆肉來做金不換蟹肉意粉。</p>
<p>由於這隻蟹非常新鮮，蟹肉十分鮮甜！加了新鮮蕃茄及金不換葉，增加了意粉的香氣但又不會蓋過蟹的甜味！意粉煮至剛剛熟，還很有咬口！不消5分鐘就把它吃進肚子裏，老公也說：「好好味啊」，大滿足也❤️<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_3273.jpg" class="size-full wp-image-5547" width="3806" height="3024"></p>
<p>材料：加拿大珍寶蟹一隻、金不換兩棵、車厘茄六至七粒（切半）、蕃茄兩個、意粉250 g、蒜頭六至七粒（略拍扁）</p>
<p>調味料：生抽一湯匙、椰糖兩茶匙、茄汁兩茶匙、蘋果醋少許、鹽少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_3267.jpg" class="size-full wp-image-5548" width="3024" height="4032"></p>
<p>步驟</p>

<p>5.在小鍋中爆香三棵蒜頭，加入蕃茄粒炒香，再加入茄蓉及調味料煮滾試味<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_3270.jpg" class="size-full wp-image-5552" width="3024" height="4032"></p>
<p>6.意粉放入加了鹽及油的滾水中，以中火煮9分鐘，盛起加點橄欖油備用</p>
<p>7.在炒鍋中爆香三至四棵蒜頭，放入蟹肉爆香，加入意粉炒香後再注入意粉汁料，收執後加入車厘茄及金不換葉拌勻即可</p>
