<p><strong>上星期自創了這一款紅麴腐乳黑毛豬扒，差不到味道十分之好，層次也十分豐富。</strong></p>



<p>話說在上星期一天外送後很肚餓，買了黑毛豬扒做晚餐，但又不想單調地用生抽及香茅來醃製。打開雪櫃攞靈感，見到大孖腐乳還有兩至三磚，附近的紅麴醬也剩餘不多，於是就來一個Mix and match，用上這兩款醬料來醃製豬扒，差不到腐乳的味道與黑毛豬扒非常夾，加了紅麴也為豬扒帶來淡淡的酒香味。</p>

<p>黑毛豬扒洗乾淨後用廚房紙抹乾，再用刀背拍鬆豬扒肉，加入醃料醃製最少30分鐘</p>

<p>黑毛豬扒放在錫紙裏，包好後放氣炸鍋，以200度溫度先氣炸10分鐘</p>

<p>除去錫紙後，掃上蜜糖，以200度的溫度每邊氣炸3分鐘即成</p>

<p>今天中午的時候想做一個惹味的蝦醬雞翼給自己食，用油炸最好味，當然用氣炸鍋都可以，但就做不到柔潤的效果，所以做這個雞翼還是用油炸比較好吃。至於做法呢，則是非常簡單！只需要把所有醃料放進雞翼醃15至20分鐘，再炸熟就可以啦！用嚟送飯好好味，用來做小食都一流喎！</p>

<p>把雞翼醃料倒去，加入適量的生粉至雞翼的表皮略乾</p>



<p>放入已煮熱的油，以中火炸5分鐘，再調高至大火，再炸1分鐘即成</p>
