<p>小時候每逢星期天都會和家人外出到酒樓吃飯，爸爸很愛點的其中一道菜色是燒腩仔，小小的一碟燒腩仔只有數件就索加數十元，雖然價錢不便宜但是每次還是會點，因為實在太喜歡他脆脆的皮和嫩滑的肉。</p>



<p>其實這道菜式我以前也會做，但在未有氣炸鍋錢都是使用焗爐來做，皮也能烤得脆脆的，就是欠缺了酒樓那種鬆化的感覺。</p>



<p>今次使用了氣炸鍋來做，不能說可與酒樓比較，始終酒樓的明爐溫度非常高，但是我可說這到脆皮燒腩仔已有95分，皮脆之餘也很鬆化，最重要的是在家自己做可以自己選擇豬肉，新鮮的、冰鮮的、悉隨尊便。今天就用上黑毛豬來做，肉質豐盈但沒有豬的腥味，就是價錢貴了一點。但是辛苦得來志在吃，偶然奢侈一下讓自己開心一點也無妨。而醃料也用上喜馬拉雅山岩鹽來做，不會太死鹹。</p>

<p>材料：豬腩一件（我的豬腩重約1300g)<br />醃料（豬肉部份）：鹽55g、五香粉6g、紹興酒三瓶蓋、胡椒粉1/3茶匙<br />醃料（豬皮部份）：白醋一湯匙、粗鹽適量<br /></p>
