<p>喜歡到泰國餐館吃飯的朋友，往往都很愛吃菠蘿炒飯，加入了菠蘿粒的炒飯帶點甜甜酸酸的味道，使人份外開胃。加入了腰果及肉鬆的菠蘿炒飯，為炒飯加入脆脆的口感。今次把鹹蛋黃也加入在菠蘿炒飯中，愛其與眾不同鹹鹹香香的味道。菠蘿炒飯其實不難做，最麻煩就是把新鮮的菠蘿起肉。在外面吃的菠蘿炒飯一般也會用罐頭菠蘿，味道當然比不上用新鮮菠蘿及新鮮雞髀肉啦！星期六日趁着有空的時候大家也是試下煮啦！</p>

<p>材料：菠蘿一個、去骨雞髀兩隻、鹹蛋一隻、雞蛋一至兩隻、腰果適量、肉鬆適量、米三杯、蔥花適量</p>



<p>雞肉醃料：生抽一茶匙、魚露少許、糖少許、麻油少許</p>

<p>用大匙羹把粒粒的菠蘿取出，同時把菠蘿殼放入氣炸鍋或焗爐中以二百度烘乾</p>

<p>在處理菠蘿的同時把米飯煮好，我比較喜歡用新鮮飯煮炒飯，米和水的比例是3杯米：兩杯半水</p>

<p>鹹蛋取鹹蛋黃，蒸10分鐘後切粒</p>

<p>雞髀去皮切粒，以醃料醃好</p>



<p>在炒鍋中加入適量的油，燒熱炒鍋，先放雞肉爆香至八成熟，取出備用</p>

<p>把煮好的米飯及鹹蛋黃放在炒鍋中炒香，在旁邊加入少許油，放入雞蛋，注意不要馬上混合否則飯會變得很林，要待雞蛋稍為煎成荷包蛋形狀，快手兜勻，今次我下了兩隻雞蛋，要逐隻煎好，再兜勻不要心急啊！</p>

<p>在飯旁邊加入少許油，爆香菠蘿粒</p>

<p>加入已經爆香的雞肉，記着不要把油也到落去啊後加入鹽、生抽及魚露少許試味後加入蔥花，把炒飯放入菠蘿中，上面加入肉鬆及炸香料的腰果即成</p>
