<p>細細個同屋企人去西貢食晚餐，最鍾意就係食瀨尿蝦，炸香左嘅瀨尿蝦連學都卜卜趣好好味。肉質方面其實我鍾意食斑馬瀨尿蝦，因為比較鮮甜，但係呢款瀨尿蝦好難炸得好脆！今日同朋友嘅爸爸傾開計，原來佢之前係做中式酒樓廚師，俾咗個秘訣我，今晚試吓整OK喎！大家不妨試試做，係屋企都可以食到西貢海鮮嘅味道！</p>



<p>我呢今日就試做一隻，因為小朋友話瀨尿蝦個樣好醜樣，唔想食，咁我就自私食啦！</p>

<p>材料（一人份）：斑馬瀨尿蝦一隻，泰國米粉20 g、蔥花適量、蒜粒適量、五香淮鹽約1/3 茶匙、鹽少許、竹籤兩支、指天椒數片</p>

<p>1. 斑馬瀨尿蝦買回來後，先放雪櫃雪最少30分鐘，取出瀨尿蝦洗乾淨，抹乾水份，灑上少許的五香淮鹽醃味一會兒</p>

<p>2. 燒熱生油，放入米粉（可先放進少許看一看油溫是否夠熱，如果油溫夠熱的話米粉會瞬間炸開，浮面）</p>

<p>3. 放入米粉後攪拌一會兒，約15秒即可取出</p>

<p>4. 瀨尿蝦再次抹乾水份，以竹籤固定瀨尿蝦的形態，我的竹籤不夠長，所以用了兩支來固定</p>

<p>5. 把瀨尿蝦放進滾油中，背部向上，先以中火炸5分鐘，因為瀨尿蝦帶有很多水份，所以小心彈油（我會以鑊蓋保護自己）</p>

<p>6. 反轉瀨尿蝦再以中火炸5分鐘，取出瀨尿蝦備用</p>

<p>7. 在炸瀨尿蝦的時候，在另一邊的爐上放上小鍋，加入少許油，爆香蒜粒直至金黃色，取出瀝乾油</p>
