<p>原來好多朋友鍾意食滷水大墨魚，滷水大墨魚嘅做法其實非常簡單，最緊要係有一煲好靚嘅滷水！至於大墨魚呢，喺宜家呢個季節好多街市都有得賣，我嗰隻大墨魚係喺樂富街市買到嘅，不過價錢唔平，上次買嘅大墨魚，一兩係$10，半隻大約160至$180左右！不過以游水來講，味道鮮甜，貴少少都值得！</p>

<p>Q:滷水要如何存放?</p>



<p>A: 滷水使用後，要先用隔篩過濾肉碎，滷水放涼後如果在未來三至四天不會使用的話，我會把其放在冰箱。每兩個禮拜取出，加熱後放涼，再放回冰箱即可。當然，每個星期使用的話，滷水的味道會更好。</p>



<p>Q: 滷水要如何才能保持其品質</p>



<p>A: 每次煮食後要把肉碎過濾乾淨，另外在每一次使用滷水之前，把上層的油分以小匙除去。放進冰格前要確保滷水放涼</p>



<p>Q: 滷水越用越小要如何處理</p>



<p>A: 可以按情況加水（如果太鹹）或者加頭抽（如果味道不夠），加入頭抽後需按比例加入冰糖及香草材料，以確保滷水的味道維持</p>



<p>Q: 滷水的保存期如何</p>



<p>A: 只要正確使用滷水，滷水可以用上好多年，我家的滷水已經用咗10幾年啦！味道會越嚟越好</p>



<p>Q: 還有其他注意的事項嗎？</p>



<p>A: 如果要滷肉類，請先把肉類汆水後洗乾淨才放進滷水，因為肉類的血水帶有腥味，會影響滷水的質素。</p>



<p>如果要滷豆腐，最好把滷水取出來用，由於豆腐會令滷水容易變味，所以分開來用比較好！</p>

<p>我相信其實唔同嘅家庭係有唔同嘅滷水食譜，而我今日就分享一下我哋屋企嘅滷水食譜啦！</p>



<p>大家都知道我係鍾意做泰菜，近幾年嘅滷水加入咗少少泰國菜嘅材料，例如香茅、南薑、芫荽根、新鮮沙薑，令到滷水嘅層次更豐富！</p>
