<p>最近都買到新鮮嘅海蟹，拆咗肉之後用來整意粉，加上日本直送嘅螢光魷魚同埋三文魚子，配合西式同日式嘅香草，味道不錯！就算返工嘅朋友都可以準備豐富又新鮮嘅晚餐！</p>

<p>材料：紅蟹三隻（拆肉）、螢光魷魚（半盒）、三文魚子50g、淡忌廉80ml、青檸1/3個、新鮮粟米粒少許、洋蔥¼個（切粒）、蒜頭四粒（切細粒）、紅蔥頭一個（切細粒）、意粉150g(按包裝煮至八成熟）</p>



<p>香草材料：西式刁草一棵、西式番茜一棵、日本大蔥一條（全部切碎）日本木之芽少許、車厘茄六粒（一開2）</p>



<p>調味料：海鹽適量、魚露少許、白酒少許</p>

<p>步驟</p>



<p>1. 在炒鍋中加入油，燒滾後加入洋蔥粒、蒜頭粒及紅蔥頭粒炒香</p>



<p>2. 加入蟹肉略炒，再加入白酒炒香，加入新鮮粟米粒、意粉及淡忌廉煮一會</p>



<p>3. 加入香草材料（木之芽除外）拌勻後試味至合適</p>



<p>4. 在上面放上三文魚子及木之芽即可</p>

<p>中國人很重視過冬及農曆新年，每逢過冬及農曆新年都會聚首一堂，談天說地。今年的冬至及農曆新年都在疫症中渡過，用餐的選擇少了，很多朋友都會選擇盆菜。一來因為方便，二來菜式選擇很多，一盤過夠晒成家食。</p>



<p>以往我也會幫襯外間的盆菜，但是就是吃不到心目中的味道。我很喜歡吃海鮮，但是海鮮盆菜的選擇較少，有時海鮮的質素也不太理想，加上外間的盆菜一般也有豬皮、魷魚、魚球等等&#8230;&#8230;這些我不太喜歡吃的材料，所以今年做冬決定自家製！選擇最喜歡吃的材料，用上無添加的醬油，每種食物的鮮味仍在，一鍋上，暖笠笠，夠晒一家人吃！</p>



<p>今年過冬大家也可以選擇自製盆菜，就跟我下面個食譜整啦！呢個盆菜我只係用咗一個半鐘頭做，係咪好快呢❤️❤️❤️</p>

<p>材料</p>



<p>蔬菜類：</p>



<p>紹菜一個、西蘭花一個、日本大根一條</p>



<p>海鮮類</p>



<p>大虎蝦二至四隻、南非鮑魚（4頭）一斤四隻、生曬金蠔6隻、花螺半斤</p>



<p>肉類</p>



<p>有機三黃雞半隻、鵝掌四隻、鵝翼8隻</p>



<p>其他</p>



<p>枝竹$10、日本花菇8隻、魚蛋10粒</p>



<p>虎蝦調味：茄汁一湯匙、生抽少許、黑醋一茶匙、糖一茶匙、紅蔥頭兩粒（一開四）、洋蔥1/4個（切件）</p>



<p>金蠔製作材料：蔥段及薑絲適量、紹興酒1瓶蓋、蜜糖適量</p>



<p>花螺製作材料：柱侯醬一茶匙、豆瓣醬一茶匙、蔥段少許、紅蔥頭兩粒（一開4）、薑片兩片、蠔油一茶匙、生抽一茶匙、糖少許</p>



<p>步驟</p>



<p>蔬菜處理</p>



<p>1. 紹菜洗乾淨切段，西蘭花洗乾淨把花切下來、日本大根去皮後以滾筒式的方法切件</p>



<p>2. 在鍋中加入兩片薑片，爆香後加入紹菜，加入一湯匙蠔油及少許糖煮大約3至4分鐘，盛起備用</p>



<p>3. 西蘭花灼熟，盛起備用</p>



<p>4. 日本大根放在雞湯中，以中慢火煮30分鐘至林</p>



<p>海鮮處理</p>



<p>1. 大虎蝦去除沙囊及蝦腸，抹乾水。放入已加熱的鍋中，以中小火煎香，加入乾蔥頭兩粒及洋蔥件爆香，加入茄汁、黑醋、生抽及糖，蓋上蓋子，煮1至2分鐘</p>

<p>2.金蠔洗乾淨後，在上面加上蔥段、薑絲及少許紹興酒，蒸10分鐘，取出後洗淨抹乾，放在小鍋中煎香，兩邊掃上蜜糖即可</p>

<p>3. 南非鮑魚以刷子刷乾淨，放在滾水中煮1分鐘，取出後去除鮑魚嘴及腸臟，殼也洗淨備用</p>

<p>4. 花螺洗乾淨，放入滾水中，煮6至7分鐘，取出。在炒鍋中加入兩片薑、紅蔥頭及蔥白，爆香後加入柱侯醬、豆瓣醬、蠔油、生抽及糖，加入花螺及兩湯匙的水，蓋上蓋子煮2分鐘即成</p>

<p>今日終於一嘗大怪獸龍蝦的味道，肉質非常爽口已不會太硬，海水味濃卻帶點甜甜的海鮮味道。龍蝦非常彈牙，使人想一吃再吃。用上三個不同的方法來處理，各有不同的捧場客。</p>



<p>女兒喜歡吃愛文芒牛油果龍蝦沙律，喜歡龍蝦鉗那種獨特的口感及愛文芒果的鮮甜果味、老公則愛吃黃咖喱龍蝦，說龍蝦的蝦膏混入咖喱汁中非常有層次。我則喜歡吃豉椒龍蝦球，愛其彈牙的口感及齒頰留香的海鮮味。就分享一下食譜給大家，豉椒龍蝦球及黃咖喱龍蝦，所用的食譜是以前寫落的，但之前是用來炒聖子及炒蟹，做法大致類同，就不再寫了（懶🤣）今次就分享一下愛文芒牛油果龍蝦沙律的食譜給大家啦。</p>

<p>材料：大龍蝦鉗一隻（如沒有大龍蝦的話可以用普通的波士頓龍蝦，但要用上一整隻龍蝦）、愛文芒果一個、牛油果一個、溫室青瓜兩條、羅馬生菜一棵、車厘茄15粒、日本芝麻適量</p>

<p>沙律汁：日式柚子醋一湯匙、芝麻醬一湯匙、鹽少許、橄欖油少許</p>



<p>步驟：</p>



<p>大龍蝦鉗放在滾水中，以中火煮15分鐘至熟（如用普通波士頓龍蝦的話，煮8至10分鐘即可），放入冰水降溫，除去龍蝦殼，切粒備用</p>

<p>愛文芒果及牛油果去皮切粒，溫室青瓜切絲、羅馬生菜切段、車厘茄一開為二備用</p>



<p>在沙律碗中加入龍蝦粒，愛文芒果及律油果粒、羅馬生菜、青瓜絲及車厘茄，拌入醬汁，最後加入日本芝麻即可，放在雪櫃最少兩小時，口感涼涼非常好吃！</p>
