<p>去完旅行返嚟之後忙咗好多日，今日終於都休息！既然休息就要研究吓食譜做吓實驗喇！第一擊就整泰北金麵先啦！</p>



<p>喺清邁買咗一包蛋麵返嚟，差唔多一個星期，要快啲食咗佢嘅，khan soi 喺清邁嘅時候Cooking Class學過，喺文青市集又食過，然後喺玩zip line 又再食多次，次次都有啲唔一樣！顏色的我喜歡文青市集橙黃色嘅、味道我就喜歡Cooking Class老師教嘅、texture 我就鍾意喺zip line 嗰度的，自己整就結合晒三個喜歡嘅特徵，再加上一啲自己喜歡嘅醬料，自己整出嚟嘅khao sai 啱晒自己嘅口味！</p>



<p>Btw 大家唔好睇呢個今年顏色好橙黃色以為好辣，其實真係超級超級好食！有機會試吓整啦！</p>

<p>到泰國的時候很喜歡到地道的餐廳吃泰式豬手。泰式豬手有點像中式的滷水豬手，但帶一點獨特的泰式香草味，加了美祿粉來煮，添了淡淡的甜味。在曼谷吃的泰式豬手，通常都是把豬手放在醬汁中炆煮至林，今天用上一個特別的方法來煮，先把豬手及香草材料煎香，再加入醬汁及調味料來煮，做出來的效果比起就咁炆煮好好多，爆炒後的香料，味道更為突出。加上用了日本的蘭王雞蛋，美味倍增！而家去唔到旅行大家就喺屋企試嚇自己整啦！</p>

<p>香草材料：<br />莞茜根六條、南薑六片、八角三粒、桂皮兩塊、白胡椒粒少許、蒜頭五至六粒</p>



<p>醬汁材料：<br>美祿兩湯匙、蠔油4湯匙、生抽4湯匙、魚露一茶匙、椰糖兩湯匙、水適量、老抽兩湯匙</p>



<p>步驟：</p>



<p>豬手以跑活水的方式處理，清理後去除豬毛</p>



<p>在鍋中加入一湯匙的油，把所有香草材料（莞茜根除外）及冬菇放進爆香，加入豬手煎香豬皮</p>

<p>加入醬汁材料煮滾，加入豬手及莞茜根，待醬汁再煮滾後，以中小火炆煮直至豬手變林，取出豬手放涼</p>

<p>在豬手炆煮的過程中，把雞蛋放進室溫水中，以中火煮13分鐘至熟，待涼後去殼，把雞蛋放進醬汁中，浸最少1小時（過夜更佳），切開與豬手同吃，非常好味呀！</p>
