<p>每年夏天都會做呢個菜式，因為夏天實在好熱，做泰式酸辣鳳爪酸酸甜甜又涼浸浸，開下胃口都係一個唔錯嘅選擇！早兩年做嘅泰式酸辣鳳爪冇加到雞醬，今年嘅酸辣鳳爪加咗雞醬，味道又豐富左喎！大家試吓跟住做，在炎炎嘅夏日開下胃啦😄😄</p>

<p>材料：無骨鳳爪1磅、紫洋蔥1/3個、甘筍1/2條、莞茜2棵（連根）、蒜頭5粒、車厘茄4-5粒、冰塊適量、芹菜3條（切段）、蔥2條（切段）</p>



<p>調味：魚露50ml、室溫水適量、熱水少許、椰糖適量、青檸汁一個、指天椒一至兩隻（切片）、雞醬兩湯匙</p>



<p>步驟：</p>



<p>1. 無骨鳳爪解凍後洗淨</p>



<p>2. 煲一鍋滾水，加入薑片，放無骨鳳爪在內，以中火煮5分鐘，再放冰水冷卻10分鐘，取出後晾乾水後一開二</p>

<p>3. 紫洋蔥及甘荀切幼絲，莞茜連根洗淨，切段備用，莞茜根略拍至出味；蒜頭去皮切盅碎、車厘茄1開為二</p>

<p>4. 在大碗中加入椰糖，以少許熱水融解椰糖，加入魚露、青檸汁、雞醬及盅碎了的指天椒試味至合適</p>

<p>5. 加入莞茜根及蒜再試味至合適</p>



<p>6. 在大碗中放進無骨雞腳、甘筍絲、紫洋蔥絲、芹菜、車厘茄及蔥段，加入醬汁攪拌均勻，放雪櫃最少5小時至涼</p>
