<p><strong>小時候非常喜歡吃乾炒牛河，最有記憶的是大約在</strong>4<strong>、</strong>5<strong>歲的時候跟隨媽媽到廣州探親。那個時代的廣州人們還是會自備不鏽鋼保溫盒到餐廳買外賣的年代。</strong></p>



<p>年紀小小的我最記得是和媽媽經過橫街窄巷，街道黑得見不到五指。所以有點兒害怕，經過橫街窄巷之後就到達一間燈火比較通明的舖頭，還記得舖頭外面有一個叔叔用大鐵鑊在炒河粉，非常非常香！</p>



<p>回家後吃一口乾炒牛河，這是我第一次吃乾炒牛河，覺得非常非常好吃！返到香港以後，也經常在餐廳吃乾炒牛河，但卻吃不到這種味道。後來廣州的舊區重建了，這家乾炒牛河店也不知到了哪裏。</p>



<p>及後知道乾炒牛河用很多油，不太健康，所以近十年都很少吃了。猜不到的是，我的女兒和兒子都很喜歡吃乾炒牛河。既然要吃就吃得健康一點啦！自己做就最健康啦，還最乾淨呢！雖然鑊氣不能媲美外面餐廳，但是味道也不錯！</p>

<p>材料：河粉一斤、銀芽四両、牛肉$50（逆紋薄片）、洋蔥¼個（切絲）、蒜頭四粒（拍扁）、蔥段適量、油2湯匙、雞蛋半隻、白芝麻少許</p>



<p>牛肉醃料：生抽一湯匙、老抽一茶匙、蠔油少許、糖半茶匙、生粉少許、水少許、麻油三份一茶匙</p>



<p>醬汁：生抽2-3湯匙（視乎生抽的咸度）、老抽一湯匙、椰糖一茶匙</p>

<p>步驟</p>



<p>1. 河粉買回來後放室溫，取出逐條分開洗乾淨，瀝乾水，加入半隻以打發的雞蛋備用</p>

<p>2. 牛肉洗乾淨後切薄片，記住要逆紋切斷牛肉才好，以牛肉醃料醃最少15分鐘</p>

<p>3. 在炒鍋中加入油，先爆香蒜頭、洋蔥及蔥白直至焦黃色，加入銀牙略炒取出備用</p>

<p>4. 在同一個炒鍋中加入牛肉，煎煮至九成熟，盛起備用</p>

<p>5. 在同一行炒鍋中加入一湯匙的油，放入河粉，以筷子輕力攪拌（不要用鑊鏟會很容易弄斷河粉）直至河粉煎至微微焦黃</p>

<p>6. 加入醬汁材料，以筷子拌勻試味</p>

<p><strong>似乎大家真係好鍾意呢一個食譜，趁今日得閑啲快快手寫咗俾大家先，然後可能要等到下星期先得閒出另外一個食譜啦</strong>😊</p>



<p><strong>香港人好鍾意食芒果製的甜品，但凡是芒果西米露、芒果</strong> Pancake<strong>、楊枝甘露、芒果河粉等等，都有很多捧場客。我也十分喜歡吃芒果，最愛吃菲律賓芒果及泰國芒果。之前在街吃過芒果河粉，覺得應該不太難整，就試試看做吧！結果是，真的不算難整，就是有一點點麻煩啦！但是自己整的，真材實料，不用添加太多砂糖，可按自己口味加減甜酸，所以還是自製好吃吧！</strong></p>

<p><strong>材料（4人份）：</strong></p>



<p><strong>芒果汁材料：芒果兩個、糖適量、水少許（半個切件備用，另外一個半作為芒果汁使用）</strong></p>



<p><strong>芒果河粉材料：蒟蒻粉</strong>40 g<strong>、椰奶</strong>160g<strong>、水</strong>200g<strong>、砂糖</strong>30 g<strong>、鹽少許，一個扁平的方形碟</strong></p>



<p>小丸子材料：糯米粉70 g，水30-35g(需要自行調節一下）</p>

<p>步驟（芒果河粉）</p>



<p>1.把椰奶及水混合放在一個容器內，把蒟蒻粉砂糖及鹽混合，放在另外一個容器內</p>

<p>2. 把椰奶及水慢慢注入蒟蒻粉及砂糖混合物中，輕力攪勻</p>



<p>3. 把已經混好的蒟蒻粉及椰奶放在小鍋中，以中慢火慢慢煮滾，需要適時攪拌以免起粒粒</p>

<p>4. 把混合物放在扁平的方形碟，放室溫15-20分鐘即會凝結</p>



<p>5. 已小刀子或煎鏟輕力𠝹開，即成椰汁河粉</p>

<p>步驟（小丸子）</p>



<p>1. 把水慢慢注入糯米粉中，搓混即成糯米粉團</p>

<p>2. 把糯米粉團搓成幼條狀再切開，再搓成丸子</p>

<p>步驟（芒果汁底）</p>



<p>1. 芒果去皮起肉，放進攪拌機中，加入¼茶匙的砂糖，少許水（即食的話則加入冰粒），攪拌即成芒果汁底</p>
