<p>熟客話曾經好多年前喺一間餐館食過呢度菜式，由於係秋季限量嘅關係，只係食過一年之後就冇咗啦。但係佢就念念不忘鹹蛋黃加埋蟹粉嗰種濃香嘅味道，於是搵我來試一試做，睇吓做唔做得返嗰種味道。</p>



<p>呢個鹹蛋黃蟹粉試咗整兩三次，試驗落唔同份量嘅花雕酒，同埋唔同數量嘅鹹蛋黃做出來嘅分別。最後發現用兩隻鹹蛋黃樽、少許花雕，就能帶出蟹嘅鮮味同事鹹蛋黃唔會搶咗蟹嘅香味。</p>



<p>試驗完畢，本身打算尋日send出去俾客人先發現睇錯日期🤣🤣好彩最後都有朋友食咗，評論都唔錯就寫食譜俾大家啦！</p>

<p>今日海鮮檔嘅老闆送俾我幾隻紅花蟹，唔好睇佢細細隻，其實都非常之鮮甜！咁啱屋企有一個伊麵喺度，再買少少芽菜同草菇返去，快快脆脆整個伊麵做晚餐😄</p>



<p>加了蛋白，令到蟹肉嘅質感更加好味，自己做嘅蟹肉伊麵唔止係新鮮，仲要啖啖肉！非常美味</p>

<p>材料：紅花蟹2-3隻（視乎大小）、芽菜少許、蛋白一隻、雞湯200毫升、蔥段適量、草菇4兩（洗乾淨後對半切開）、粟米粒少許、大伊麵一個、蒜頭3-4粒（拍扁）、木之芽用作裝飾</p>

<p>步驟</p>



<p>1. 紅花蟹洗乾淨後，蓋向下腳向上，蒸13分鐘，待涼後拆肉（蟹殼留用，今次我姐姐幫手拆肉，只留咗蟹蓋）</p>



<p>2. 把蟹殼沖洗乾淨，放入氣炸鍋中，以200度氣炸5分鐘</p>



<p>3. 取出後把蟹殼及雞湯放在小鍋中至滾，再轉細火煮10分鐘，即成為蟹高湯</p>

<p>4. 伊麵放滾水中煮開，再用水喉水洗淨</p>

<p>5. 在炒鍋中加入2湯匙的油，爆香蒜頭，加入草菇炒香，加入粟米粒及蔥白</p>

<p>6. 放入伊麵後加入蟹高湯約50ml，煮一會兒，加入鹽及魚露調味後加入青蔥段拌勻</p>

<p>7. 把炒鍋洗淨，加入銀芽炒香，加入蟹肉後再加入少許鹽及魚露調味，關火候注入蛋白即可</p>
