<p>龍蝦真係點樣整都好好食！上湯龍蝦伊麵、芝士龍蝦伊麵、龍蝦湯、龍蝦沙律……全部都好好食，但係講到最鮮味嘅就一定係龍蝦刺身！</p>



<p>其實本地嘅龍蝦或者係澳洲嘅龍蝦都適合用來做龍蝦刺身，首要係揀一間信得過嘅海鮮檔，因為做刺身，龍蝦的肉不會經過加熱處理，所以要選擇一間乾淨企理嘅海鮮檔。</p>



<p>自己做龍蝦刺身，其實不難，就係要少少耐性同埋時間，至於點龍蝦刺身嘅醬汁，我個人認為用日本嘅柚子醋最為適合，大家快啲睇吓龍蝦刺身要點樣做。</p>

<p>龍蝦係我鍾意食嘅海鮮之一，非常鮮味彈牙，有一種難以言語嘅味道。喺眾多龍蝦來講，南澳龍蝦嘅肉質比較鮮甜，無論用來做刺身、上湯龍蝦伊麵、芝士龍蝦伊麵、龍蝦球……都十分適宜。</p>



<p>前幾天買來一隻一斤10両的南澳龍蝦，細心地將龍蝦尾起肉，切成龍蝦球，加XO醬來炒，再加埋珊瑚蚌一齊煮，簡單好味😊😊</p>

<p>今日係大年初三，加上係情人節。因為疫症嘅緣故唔可以出街食晚飯慶祝，就決定自己煮，要煮就當然係煮我最鍾意嘅海鮮！龍蝦是首選，今日仲要煮南澳龍蝦，多肉又好味。</p>



<p>記得好多年前喺京都食具足煮龍蝦，用簡單嘅調味料，帶出龍蝦嘅鮮味。今日就同大家分享一下呢個唔係好正宗嘅日本具足煮龍蝦啦！</p>

<p>材料：龍蝦一隻、日本大根半條、刺身用帶子4粒、檸檬皮少許、Wasabi少許</p>



<p>醬汁材料：鰹魚汁2湯匙、水300ml、黃糖少許、味醂一湯匙</p>



<p>其他：清酒一湯匙</p>

<p>步驟</p>



<p>1. 龍蝦放冰格雪暈，對半切開，除去龍蝦鰓，斬件後備用</p>



<p>2. 刺身用帶子洗乾淨用廚房紙抹乾</p>



<p>3. 檸檬皮除去白色部份，切幼絲備用</p>



<p>4. 日本大根切件</p>



<p>5. 在鍋中加入醬汁材料，煮滾後把日本大根及龍蝦頭放進以中小火煮10分鐘</p>

<p>6. 切件後的龍蝦放進炒鍋中，以中火煎香，加入一湯匙的清酒炒香後盛起隨即煎香帶子，也盛起備用</p>

<p>7. 把大根、煎好的龍蝦件、龍蝦頭及龍蝦糕放在碟中，加入醬汁材料，在上面放上檸檬皮絲及wasabi即可</p>

<p><strong>認識我的朋友都知道我很喜歡吃海鮮，在眾多海鮮之中最愛的是龍蝦。這可能是與至少的薰陶有關係吧！小時候喜歡和家人到酒樓吃飯，最愛點龍蝦這道菜式。爸爸說在酒樓吃龍蝦火候很足夠，所以煮出來的龍蝦特別好吃。</strong></p>



<p>由於家人比較喜歡吃上湯龍蝦伊麵，所以一直也比較少煮芝士龍蝦伊麵。直至前幾天，有一位客人說今天是他爸爸的生日，希望我為他製作一道爸爸最愛的芝士龍蝦伊麵。為此，昨天晚上我先試做一次，自家製的芝士龍蝦伊麵，可選擇用質素較佳的芝士，喜歡吃伊麵的加多一點也可以！最緊要的是，龍蝦伊麵不難做啊！大家也來試試做吧！</p>

<p>材料：波士頓龍蝦兩隻（開邊後切件）、洋蔥半個（切細件）蔥頭四粒（切片）、蔥段適量、伊面（一大一中）</p>



<p>芝士汁材料：芝士兩塊、淡奶300 g、鹽半茶匙、糖少許、黑胡椒少許、牛油一茶匙</p>

<p>步驟：</p>



<p>1.龍蝦切件後，沾上適量的油，放在氣炸鍋中，以200度的溫度氣炸6分鐘至八成熟</p>

<p>2. 伊麵以滾水煮30秒</p>

<p>4. 在炒鍋中爆香蔥頭、蔥白及洋蔥，加入芝士汁材料（芝士塊除外）煮滾，放入以氣炸好的龍蝦，加入芝士塊，蓋上蓋子中火煮4分鐘</p>

<p>本身想在上個星期分享這個食譜給大家，但是因為實在太忙的緣故，最後遲遲地在今天才寫食譜給大家。藍龍蝦的樣子與波士頓龍蝦差不多，但是味道卻鮮味很多，肉質亦非常彈牙。</p>



<p>今次就分享埋點樣煮伊麵俾大家睇，等大家可以follow一下！但是因為肚餓的關係，所以有些步驟沒有相片呢，大家只要跟從步驟去做，就必定會成功啦！</p>

<p>材料：伊麵一個、藍龍蝦一隻（大約一斤）、青蔥適量（切段）、洋蔥¼個（切件）、薑三片</p>



<p>調味料：雞湯一杯、紹興酒一湯匙、糖一茶匙、生抽一湯匙、老抽適量、生粉水少許、魚露一茶匙</p>



<p>步驟</p>



<p>藍龍蝦先放冰格2小時至龍蝦雪暈，開邊後切件</p>

<p>在龍蝦件上噴上油，放氣炸鍋中以200度的溫度氣炸7分鐘至九成熟</p>

<p>伊麵放在滾水煮軟，放在水喉水下洗乾淨，鯨乾水</p>



<p>在炒鍋中爆香薑片、蔥白及洋蔥件，約三至4分鐘至焦香後放入龍蝦件炒香，加入花雕酒炒香</p>

<p>朋友送來一盒非常新鮮的松本茸，胖胖的就像super mario 的菇菇，很可愛！前天試了用金不換炒，獨特的菇味非常美味。今天買來兩隻新鮮的波士頓龍蝦，把其龍蝦肉起了出來，再加入松本茸炒香，加入芝士放進焗爐焗，邊煮一邊很想偷吃🤣🤣🤣</p>



<p>估不到的是，波士頓龍蝦的生命力實在十分頑強，下午在魚檔買，放在雪櫃內到晚上還是會動🙈，再放進冰箱雪了半小時才劏，所以吃是還是很新鮮哦！大家想吃龍蝦的話，還是在家吃吧，既新鮮又冇添加❤️❤️</p>

<p>在鍋中放入適量油，燒熱炒鍋，放入龍蝦件，每邊煎5分鐘，加入10 mL白酒，蓋上蓋子煮1分鐘，盛起備用<br></p>

<p>今天買了兩隻龍蝦自己食，本想打算做中式龍蝦伊面。但是外送是用剩了一點點金不換葉，又突然想吃麻油麵，就來一個中日泰fusion龍蝦伊麵啦！加了日式鰹魚汁的龍蝦伊麵，比起用中式的方法，多了少許的甜味及鰹魚的鮮味。金不換葉使味道更為清新，小朋友都說：「今天的龍蝦伊面特別好味」。</p>

<p>材料：龍蝦兩隻（我用了一隻波士頓龍蝦、一隻本地龍蝦）、伊面兩個<br>香草材料：薑片三片、蒜頭五至六粒、紅蔥頭三至四粒（一開四）、蔥段適量、金不換葉適量<br>汁料：生抽兩湯匙、糖少許、鰹魚汁一湯匙、雞湯約30毫升、麻油少許<br>其他：生抽一湯匙、生粉適量、酒適量</p>

<p>步驟：<br>1.龍蝦洗淨斬件，加入一湯匙生抽、少許糖及生粉醃5分鐘，伊面已熱水煮熟，取出備用<br>2.準備一鍋熱油，把龍蝦放進走油至金黃色後取出</p>

<p>大家都知道我很喜歡吃海鮮，尤其是愛吃龍蝦。住在附近的鄰居也十分喜歡吃海鮮，還告訴我很喜歡喝龍蝦湯。</p>



<p>今天早上在街市看到大大隻又新鮮的波士頓龍蝦，毫不猶豫地買了回家準備做實驗！加了香草及新鮮雞殼淆湯的龍蝦湯，湯非常濃郁，而且充滿着龍蝦獨特的海鮮味。只加上一點點的鹽，就已經十分美味。大家也來試試做，把酒店龍蝦湯的味道帶回家吧！</p>

<p>材料：波士頓龍蝦一隻（約一斤）、雞湯1.5公升（我自己用雞殼淆湯，懶的話可以用現成）、洋蔥半個、茴香半個、甘筍半個、大蒜一支、蕃茄三個、蒜頭三粒、蝦頭蝦殼（隨意，越多海鮮味越濃）、茄膏一湯匙、白酒150 mL、白蘭地60 ml、淡忌廉20ml、麵粉少許、冰塊<undefined>適量<undefined></undefined></undefined></p>

<p>步驟：<br />1.把所有香草材料切粒備用<br />2.波士頓龍蝦先放在冰箱約半小時至雪暈後放尿</p>
