<p>冬天的時候大家都喜歡吃黑草羊，因為食完之後身體暖笠笠，在寒冬下吃非常美味！最近也有很多朋友訂了羊腩煲，雖然羊腩煲很美味，但是坊間很多地方都有得吃，除了羊腩煲以外，究竟要用咩方法製作黑草羊比較好？</p>



<p>大家都知道，黑草羊羊味比較重，所以中國人一般以很多香料來炆煮。那麼我就想，如果用青咖喱來煮，加上一些西式的香草，效果不知道會如何！</p>



<p>昨天到油麻地買完金箔後，就去探望羊腩叔，他二話不說拿出了一隻羊腿，說客人通常只要羊腩，不要羊腿。售不出去，那麼我就買下來啦！在油麻地街市也買來新鮮的香草及新鮮的椰汁，回家後就用他來製作午餐吧！</p>

<p>材料：黑草羊前髀一隻、新鮮椰汁斤半、青咖喱醬1湯匙、Rosemary 適量、橄欖油少許、乾的百里香 一茶匙、鹽1/3茶匙（醃羊髀用）、蒜頭三粒（切片）、蕃茜適量、薄荷葉少許</p>

<p>1. 羊髀洗乾淨後以鹽、少許橄欖油及乾百里香最少醃3小時</p>

<p>2. 在羊髀上𠝹上小孔，把蒜頭片、少許</p>

<p>3. 在平底鍋中加入少許油，放進羊腿煎香，把羊腿至於一邊，加入青咖喱醬炒香、逐少加入椰汁至出油</p>

<p>4. 直至所有椰汁加入後，加入調味料至味道適合及香草（蕃蕃、Rosemary 、少許薄荷葉），以小火炆煮45分鐘至1小時（視乎羊腿大小加減時間）</p>

<p>5. 測試羊腿是否煮好，只需要用小叉插進羊腿中，如能輕易插入，就代表羊腿已熟，喜歡辣的朋友，可以在炆煮的過程中加入指天椒</p>

<p><strong>今天到楊屋道街市買大蝦，因為外送有很多大蝦的緣故，所以必須去買。卻給我遇到很平很抵食的石蠔。</strong>$50<strong>有</strong>28<strong>隻石蠔，還附送了開蠔刀。今晚可以食餐飽！以往石蠔一般以芝士來焗。今天搞搞新意思，在街市買來新鮮的番茜及刁草，回到家才想想要如何烹調。</strong></p>



<p><strong>打開雪櫃，有紅咖喱醬、黃咖喱醬及青咖喱醬。我常常覺得，青咖喱的味道與海鮮很匹配，就用他和新鮮的香草做一道青咖喱焗石蠔吧。加入了新鮮香草的焗蠔，味道清新，再加上青咖喱，第一點美味的辣味，非常好味呢。</strong></p>

<p><strong>材料：石蠔</strong>28<strong>隻</strong></p>



<p><strong>香草材料：刁草兩棵、番茜兩棵（全部切碎）、車厘茄五粒、蒜頭四粒、乾蔥頭兩粒、洋蔥</strong>¼<strong>個（全部切粒）</strong></p>



<p><strong>青咖喱醬料：青咖喱醬一湯匙、椰糖一茶匙、魚露、椰汁約半杯</strong></p>

<p><strong>步驟：</strong></p>



<p>1. 先用開蠔刀把石蠔打開，再把石蠔洗乾淨備用</p>

<p>2. 再炒鍋中加入少許油，爆香青咖喱醬，逐少加入椰汁至青咖喱醬出油，加入椰糖及魚露拌勻備用</p>



<p>3. 在另外一個炒鍋中爆香蒜頭、乾蔥頭、洋蔥至焦香，加入車厘茄爆香，拌入青咖喱醬及香草，即成青咖喱醬</p>

<p>4. 焗爐預熱180度，把石蠔放在焗爐的烤盤中，放上青咖喱醬，放進焗爐裏，焗12至13分鐘即可</p>

<p>一直以來都很喜歡青咖喱獨特的青草味道，但是試了很多牌子的青咖喱都很辣，今次終於買到了blue elephant 青咖喱，味道有層次，不死咸又不辣😍😍😍😍，還帶有淡淡的香草味！大家想食青咖喱但又不食得辣的話，可試試看呀！另外我覺得青咖喱與海鮮搭配起來非常好吃，有興趣的朋友，快快跟着我煮啦！</p>

<p>咖喱醬材料：青咖喱醬70g、椰奶3杯、喜歡的海鮮適量、泰式茄子3-4個、油適量、南薑3片、香茅3枝（取根部切段）、莞茜根6條、檸檬葉3塊、青檸半個（取汁用）、金不換葉適量</p>



<p>調味料：椰糖2茶匙、魚露1茶匙</p>

<p>步驟</p>



<p>1. 在鍋中加入適量的油，以中火爆香，加入青咖喱醬以中小火爆至香氣四溢</p>

<p>2. 逐少加入椰奶（每次一杯）至出油</p>

<p>3. 加入香草材料及調味料煮一會，注意不可不停攪拌，會影響咖喱的味道</p>

<p>4. 泰式茄子一開8，放在加了青檸汁的滾水中煮熟</p>
