<p>材料：長腳蟹一隻（6斤，我只用了一半）</p>

<p>步驟：</p>



<p>長腳蟹洗淨後以蒸爐蒸25分鐘，待涼後拆肉（長腳蟹腳則以剪刀剪開備用）</p>

<p>蟹蓋甲羅燒</p>



<p>材料：長腳蟹蓋一個（洗淨）、日本雞蛋2隻、鵪春蛋1隻、蔥花少許、已拆好的蟹肉4湯匙、蟹膏一半、本菇1/包（洗淨）</p>



<p>調味料：鹽少許、鰹魚汁1茶匙、糖少許</p>



<p>步驟</p>



<p>1. 長腳蟹蓋洗淨後抺乾</p>



<p>2. 日本雞蛋打發好，加入調味料、蔥花、蟹肉、蟹膏、鵪春蛋及本菇，放回及蟹蓋中</p>



<p>3. 以氣炸鍋200度氣炸8-10分鐘，取出查看是否變金黃色，如未，則外加3-5分鐘</p>

<p>長腳蟹火鍋</p>



<p>材料：長腳蟹腳4隻、大白菜一個、日本大根半條、紅蘿白片少許（可省）、本菇5/8包、日本豆腐一件</p>



<p>火鍋汁料：鰹魚汁100ml、味琳50ml、清酒50ml、昆布一塊、日本醬油20ml、水適量、糖少許（試味後加入）</p>



<p>步驟</p>



<p>1. 長腳蟹腳剪開備用</p>



<p>2. 在陶鍋中加入火鍋汁料煮滾試味，把所有材料放進煮熟即可</p>

<p>長腳蟹肉茶碗煮（2碗）</p>



<p>材料：長腳蟹肉4茶匙、本菇2/8包、海蝦6隻、日本雞蛋3隻（打發好）、紅蘿蔔片（可省）</p>



<p>調味料：味琳一茶匙、清酒一茶匙、鹽少許、鰹魚汁一茶匙、水250ml</p>

<p>2. 在另一碗中打發雞蛋，加入調味料，注入小碗中，蓋上可受熱的保鮮紙蒸10分鐘即可</p>

<p>蟹香麵豉湯</p>



<p>材料：蟹殼、味增3湯匙、水4杯、鹽適量、糖少許、蟹肉隨意加入、日本豆腐一件（切粒）</p>



<p>步驟：</p>



<p>1. 長腳蟹起肉後蟹殼留用，洗淨抹乾後放氣炸鍋以200度氣炸8分鐘後取出</p>



<p>2. 把蟹殼放在炒鍋中，注入水煮滾，加入其他材料</p>

<p>材料：蟹肉3-4湯匙、日本珍珠米3杯、蟹汁5杯（蒸蟹時的汁）、鹽少許、紫菜絲少許</p>
