<p>疫情前好鍾意同朋友去食鐵板燒，睇住廚師喺面前將新鮮嘅食材煮好，然後熱辣辣送到我哋嘅面前，非常好味！鐵板燒嘅靈魂係鐵板燒汁，睇落去好似豉油嘅鐵板燒汁，其實蘊含着好多唔同嘅味道。</p>



<p>最近認識咗一位喺鐵板燒餐廳師傅，問佢一啲秘訣，佢就話俾我聽要用好多唔同嘅香料同埋材料，先可以做到咁香濃美味但係睇落去普通嘅鐵板燒汁！雖然佢冇公開份量俾我，依照一般做醬汁嘅做法，我自己試吓試吓，整咗呢個鐵板燒汁出嚟，當然冇鐵板燒餐廳百分百咁好味，但係我覺得都有九成似㗎！大家快啲試吓做，唔食鐵板燒用來做乜嘢？可以用來炒菜、炒肉一樣好味！</p>



<p>今次就用佢嚟試返炒金不換田雞！</p>

										<content:encoded><![CDATA[<p>泰菜常常使用很多香料：香茅、南薑、檸檬葉、金不換&#8230;&#8230;而在眾多香草當中，我最喜歡的是金不換的香味。金不換，英文名是sweet basil或Thai basil，葉子帶濃濃的香氣，而且甜甜地，但葉子不耐煮，一煮就會變黑，所以通常放在烹煮的最後步驟。</p>
<p>金不換的味道與海鮮尤配，所以不喜歡金不換的朋友可試炒花甲、魷魚、蝦也可。加了泰式chili paste(不辣的）及魚露炒香，再拌入新鮮金不換葉，令人涶涎欲滴的菜式10分鐘就攪掂！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/11/img_4484.jpg" class="size-full wp-image-5280" width="4032" height="3024"></p>
<p>材料：</p>
<p>象拔蚌一斤、金不換4-5棵（洗淨取葉用）、蒜頭4-5粒切粒</p>
<p>調味：泰式chili paste 1茶匙、魚露1茶匙、糖少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/11/img_4485.jpg" class="size-full wp-image-5281" width="3551" height="2645"></p>
<p>步驟：</p>
<p>1. 象拔蚌請魚販劏好，洗淨後放煲火焯一焯以去殼，瀝乾水備用</p>

<p>可是，我家的小孩還小，喝雞酒好像還不是時侯，愛玫瑰露酒的我則會在煮食時加一點點，去增加食物的香氣！</p>
<p>這道酒香金不換炒雞，不但加了一點點的玫瑰露酒，還加了很多金不換葉，煮的時候香氣滿屋，吃的時候齒頰留香，小朋友說很好吃，希望這能成為他們童年的味道，美好的回憶吧！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/11/img_3129.jpg" class="size-full wp-image-5197" width="3024" height="4032"></p>
<p>材料：鮮雞半隻（洗淨後斬件）、蔥段適量、香茅（只要根部，切片）、蒜頭3-4粒（拍扁）、指天椒一隻（切片）（可省）、金不換4-5棵、鹽一茶匙</p>

										<content:encoded><![CDATA[<p>每次到街市買菜時，都愛到海鮮檔逛逛，看看有沒有特別的海鮮給我發揮一下，今天又經過海鮮檔，居然有大大隻生猛游水大頭蝦，馬上買來一斤，一斤只有5隻，大家就知有多大啊！回家後才慢慢想如何泡製。</p>
<p>在雪櫃找到一包金不換（是呀我家中常常有很多香草，一見新鮮就買，忍不到手），就用金不換來match 大頭蝦嗎！加入了幾片指天椒及辣椒醬 少少辣又甜甜地，加上大頭蝦軟軟的蝦膏～好邪惡啊！</p>

<p>材料：游水大頭蝦一斤（也可用海蝦）、金不換一包（約4-5棵）、指天椒一隻（切片）、糖適量、蒜頭五至六粒</p>
<p>汁料：</p>
<p>泰式辣醬chili paste 1茶匙、魚露少許、糖少許、生抽約一茶匙</p>

<p>2. 金不換取葉子洗淨後瀝乾水備用</p>
<p>3. 指天椒切片可按喜好加減</p>

										<content:encoded><![CDATA[<p>很多朋友問我，為甚麼喜歡吃泰菜？其實中菜及泰菜我同等喜愛！愛做泰菜，因為喜歡用新鮮的香料，那種鮮香及獨特的味道，是其他樽裝調味料不能取代的啊！要選最喜愛的，一定是金不換，喜歡它濃濃的香草香味！</p>
<p>至於泰式醬料，要說喜愛的，第一是魚露，其次就是泰式辣醬。泰式辣醬，其實並不辣，是帶點微辣但濃濃的花生香味，甜甜的，與海鮮類非常夾。</p>
<p>今次以我喜愛的香草及第二最愛的醬料炒蟶子，就連平日不喜歡吃蟶子的老公，都很喜歡啊。<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/05/img_2001.jpg" class="size-full wp-image-2002" width="4032" height="3024"></p>
<p>材料：蟶子一斤、金不換葉適量、蔥頭1粒（切粒）、指椒（按喜好，我今次沒有加）<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/05/img_1994.jpg" class="size-full wp-image-2003" width="3024" height="4032"></p>
<p>汁料：泰式辣醬1/2 湯匙、魚露少許、椰糖少許（先拌好）、水少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/05/img_1995.jpg" class="size-full wp-image-2004" width="3024" height="4032"></p>
<p>步驟：</p>
<ol>
<li>蟶子先洗淨去除黑色內臟</li>
<li>放蟶子入滾水一會，方便脫殼</li>

										<content:encoded><![CDATA[<p>很喜歡吃茄子，愛其軟軟的質感，獨特的味道。在街吃的茄子顏色都很漂亮。深紫色又帶有油光。雖然色澤很好，但很多時都是經泡油，不大健康啊。</p>
<p>家中有了氣炸鍋後，很多時都會用之來走油，今次用在茄子上，雖然氣炸後的茄子沒有油泡那樣深紫帶光澤，但顏色還是很漂亮。加了金不換及炒蒜頭，味道變得十分香口惹味。愛茄子的你們快快收藏試試煮吧。<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/07/img_7070.jpg" class="size-full wp-image-2495" width="3024" height="2906"></p>
<p>材料：手指茄子4條、金不換（取葉）適量、蒜頭1.5個<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/07/img_7068.jpg" class="size-full wp-image-2496" width="4032" height="3024"></p>
<p>蒜蓉調味：鹽1/4茶匙、糖少許、魚露少許、生抽1/4茶匙、蠔油少許</p>
<p>步驟：</p>

<li>蒜頭去皮後切碎</li>

										<content:encoded><![CDATA[<p>泰菜中常常做用金不換葉，其獨特的味道令人一試難忘，用碎雞肉炒成打拋雞，簡單又美味，用上豬肉碎呢？油香滿瀉，各有千秋！今天突然想吃茄子，想想茄子加入肉碎及金不換炒香，味覺應該是會很好吧！</p>
<p>煮茄子雖然容易，但要保持茄子靚靚的紫色就要下一點功夫啦，餐廳的茄子能保持嫩紫，大多是以油泡過，在家中吃，不想食太多的油，要如何做呢？要保持茄子的顏色，有三個做法：第一是用微波爐以1000w熟5分鐘、第二是隔水蒸，是我用的是第三個方法，就是以滾水灼6分鐘。當然不是單純的灼，也有一些小技巧的，就在下文為大家介紹吧😀<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_8314.jpg" class="size-full wp-image-1648" width="4032" height="3024"></p>
<p>材料：茄子一條、蒜頭4粒（略拍）梅頭瘦肉$20、金不換葉適量<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_8307.jpg" class="size-full wp-image-1649" width="4032" height="3024"></p>
<p>豬肉醃料：生抽2茶匙、椰糖少許、胡椒粉少許、油少許</p>
<p>汁料：魚露少許、糖半茶匙、豉油1茶匙、紹興酒少許、蠔油1茶匙</p>
<p>步驟</p>
<ol>
<li>鍋子燒熱一鍋水，至水差不多滾時，準備茄子，茄子去頭及尾，切段<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_8308.jpg" class="size-full wp-image-1650" width="4032" height="3024"></li>
<li>豬肉切碎，以醃料醃15分鐘</li>
<li>水煮至大滾時，放入茄子，以隔篩壓著茄子，在鍋子中間，不要接觸水面及鍋底，煮6分鐘至熟<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_8309.jpg" class="size-full wp-image-1651" width="3024" height="4032"></li>
<li>茄子待涼後切滾筒狀</li>
<li>金不換取葉後走油</li>

<p>材料： 特大大連鮑魚8隻、蒜頭2粒、金不換2棵、薑3片、指天椒半隻（可按喜好加減）<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2018/12/img_2795.jpg" class="size-full wp-image-1054" width="4032" height="3024"></p>
<p>汁料：蠔油1湯匙、豉油1茶匙、魚露1茶匙、椰糖少許</p>

<li>大連鮑魚去殼後洗刷乾淨、去除鮑魚嘴及切成格狀</li>

<p>雞肉醃料： 鹽及玫瑰露酒適量</p>
<p>汁料： 麻油約10 ml、椰子糖1.5 茶匙、豉油約20ml</p>

<li>雞洗淨斬件，以醃料醃最少30分鐘</li>
