<p>幾年前出左一個雞肉串燒既食譜，一向都係私房菜到會既熱門菜式之一！幾天前突然想改良一下食譜，不如今次就用豬肉啦！用豬肉來整串燒，比雞肉仲香！沙嗲醬用新嘅食譜來整，比舊的更好味！</p>

<p>外出吃飯的時候，偶然會點魚香茄子煲來吃。鹹鹹香香嘅鹹魚配合軟軟嘅茄子，美味非常！但係喺街度食嘅魚香茄子煲，成日都有好多油。</p>



<p>之前用咗好多方法處理茄子，都發現用走油嘅方法茄子嘅顏色係最靚。今次就用走油嘅方法來處理，起碼喺屋企煮用上新鮮嘅食油，唔係出邊街嘅隔夜油，點都健康啲啲啦🤪</p>

<p>8號風球前的一天，接小朋友放學之前打算去街市買定啲嘢打風嘅時候煮，去到街市發現人多到好似做節咁。豬肉檔嘅豬肉已經所剩無己，只剩下排骨同埋飛排。馬上買來$50飛排，留返第日打風嘅時候煮。</p>



<p>飛排一般都是用炆或者蒸嘅方法嚟煮，8號風球得閑啲，試吓用半煎炸嘅方法嚟煮，估唔到效果非常理想！飛排半煎炸完質地依然好好，外脆內軟。</p>



<p>加埋青檸蜜糖去煮，甜甜酸酸非常開胃！大家經過豬肉檔買到飛排嘅話，就不妨試吓整啦。</p>

<p>今天途經尖沙咀，就到Donki行一下。居然發現有金目鯛魚頭賣，大大的一個，連埋背脊骨、魚鰭，只售$100。原本晚上做焗豬扒飯的我，突然間轉了做日式料理。</p>



<p>買了魚頭後，再買來一點日本直送的菌類、大根、及北海道直送的白雪豬肉，晚上就來煮一道暖笠笠的金目鯛白雪豬肉鍋。</p>



<p>用金目鯛做湯底，魚油豐盈！再加上獨特的魚香味，十分美味的一道菜。</p>



<p>另外今日終於用咗師傅推介嘅LC 保溫架，豬肉鍋由頭到尾都係好熱，好好味！</p>

<p>材料：金目鯛魚頭一個、白雪豬肉一pack、菌類適量（我用了舞茸菇、鮮冬菇及信洲菇）、日本紹菜半個、昆布1塊、日本大根半條、薑片3-4片</p>



<p>調味料： 味增2湯匙（自行調節）、味醂1湯匙、鹽適量</p>



<p>其他：熱水2L</p>

<p>步驟</p>



<p>1. 洗淨金目鯛魚頭，除去魚的鰓及瘀血，把魚頭切件</p>

<p>4.在炒鍋中加入薑片爆香，加入金目鯛魚頭爆香（切記一定要完全煮熟爆香），加入熱水、紹菜根部、一半大根件，以中火煮15分鐘，加入調味料試味（如果是做魚湯的話，不用加太多的鹽，如果做豬肉鍋的話，則需要比較鹹一點）</p>

<p>很久都沒有煮黃咖喱，因為在香港很難買到好吃的黃咖喱醬。今天在九龍城買到大盒裝的藍象黃咖喱醬，突然又想吃，於是就買來黑毛豬豬扒製作黃咖喱給家人吃。</p>



<p>黃咖喱的辣度比紅咖喱及青咖喱為輕，加入了椰汁及香草後。又香又濃，小朋友也能吃。配以薄餅一齊吃，把泰國館子的味道帶回家。再者疫症嚴重的日子，大家也能在家做一味黃咖喱豬扒，和家人大吃一頓吧！</p>

<p>材料：黑毛豬豬扒8件（今次做八人份量所以比較多）、黃咖喱醬四湯匙、魚露一湯匙、椰糖半湯匙、椰汁1000 ml、南薑三至四片、檸檬葉三至四片、香茅四至五支（只要根部，切片備用）、青檸汁少許、莞茜根4-5條、水約100ml、蝦醬1/3茶匙</p>

<p>豬扒醃料：鹽少許、雞蛋一隻</p>



<p>步驟：</p>



<ul><li>黑毛豬豬扒解凍後抹干，加入少許鹽及一隻雞蛋拌勻後，放氣炸鍋，以180度焗10分鐘至九成熟（如沒有氣炸鍋，也可以在鑊中煎香），切件備用。</li></ul>

<ul><li>在炒鍋中加入一湯匙的生油，把黃咖喱放進，以中火慢炒至香氣四溢。</li></ul>

<ul><li>把椰汁逐少加入黃咖喱（每次加入約200毫升）至出油，再加入椰汁，直至全部椰汁加入為止（此步驟非常重要，不可以直接把所有椰汁加進，否則椰油難以釋出，咖喱的顏色便變得非常暗淡）</li></ul>

<p>今天忙忙忙外送，到煮dinner前才發現唔就得左買肉類，好彩家中冰箱常備黑毛豬豬鞍，在冰箱中取出兩件，放份鑄鐵鍋解凍，半預時就攪掂。然後又打開廚櫃，看看用甚麼來煮，取出了檸檬葉粉、乾莞茜碎和蜜糖。再到雪櫃拎埋honey mustard同牛油，在腦中諗下是咩味道，左想右想，應該不錯，就亂咁來整個西泰fushion烤豬鞍啦！</p>



<p>用較低爐溫來焗，非常juicy呀！</p>

<p>步驟<br />1.黑毛豬鞍解凍後洗淨，抺乾後以醃料醃最少30分鐘</p>

<ol start="2"><li>預熱焗爐150度</li><li>在grill pan中溶掉牛油，放豬鞍煎香，每邊約2分鐘</li><li>把豬鞍放入已預熱的焗爐中烤7分鐘，反轉再烤7分鐘,掃上蜜糖再烤1分鐘即可，吃時伴以honey mustard ，有效消除肥膩感，為豬鞍味道加添層次！</li></ol>

										<content:encoded><![CDATA[<p>欠了大家很久的食譜，今天終於有時間寫一下，最近因為比較忙，所以自己創作的食譜也比較簡單，但簡單也能很好吃。就像這到南乳豬手，準備時間只需要20分鐘左右，再用壓力煲煮大約25分鐘，一小時內就能品嚐自家製無添加又稔又滑的豬手，用南乳醬來拌飯吃，能使人食慾大增，大人小朋友都十分喜歡❤️</p>

<p>材料:豬手一隻</p>
<p>醬料：南乳一磚、蝦醬少許、豉油約四湯匙、椰糖2茶匙、油少許</p>

<p>步驟</p>
<p>1.豬手洗淨後已跑活水方法去除雜質，用眉夾把雜毛除去</p>
<p>2.醬料拌勻，把以洗淨的豬手放進去已沾滿醬汁</p>
<p>3.放進壓力煲裏，加入少許水，煮25分鐘至豬手變林。如沒有壓力煲，則放在煲中，以中火煮滾，轉細火煮30分鐘，熄火焗30分鐘，再煮30分鐘直至豬手變林為止</p>
<p>4.如用壓力煲，煮完後的汁會較為戲稀，可把汁放在小鍋中煮至杰身即可<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_2721.jpg" class="size-full wp-image-5518" width="3024" height="4032"></p>

										<content:encoded><![CDATA[<p>最近十分繁忙，因為小朋友停課賦閑在家，要忙於和他們玩耍！令一邊廂要處理酒精搓手液的order，所以少了時間創作食譜。今天中午的時候，小朋友說很懷念某餐廳的肉絲炒麵，還指定是麵底炸得脆脆的肉絲炒麵（真識食！），早上在街市買來新鮮的牛肉，銀芽、還有瑤柱蝦子麵，加上家中的椰菜，祚來一味簡單好味又香口的牛肉絲炒麵！</p>
<p>用上氣炸鍋來炸麵底，十分香脆，小朋友10分鐘就吃完了。<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_2276.jpg" class="size-full wp-image-5508" width="3024" height="3024"></p>
<p>材料：牛肉適量（切絲或切片）、蝦子麵3個、椰菜¼個（切絲）、銀芽4両、蒜頭6粒</p>
<p>汁料：蠔油一茶匙、生抽1湯匙、老抽半茶匙、魚露少許、椰糖適量、生粉水適量（後落）</p>
<p>牛肉醃料：生抽兩茶匙、糖少許、麻油少許、油一茶匙</p>
<p>步驟：</p>

<p>我的兩個小朋友非常喜歡吃台式滷肉飯，多汁而又軟林林的滷肉拌飯非常好吃。在家煮不用太過複雜，15分鐘就煮好。簡簡單單有營養，大人小朋友都喜歡！今天中午煮了這個簡易版滷肉飯，還用了朋友在澳洲買給我的新煲，漸變紫色超靚啊！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/01/img_1892.jpg" class="size-full wp-image-5503" width="3024" height="4032"></p>
<p>材料：新鮮梅頭豬肉$30、紅蔥頭四個、蒜頭三粒、薑片三塊</p>
<p>汁料：生抽100ml、椰糖兩湯匙、鹽少許、魚露一茶匙、玫瑰露酒一茶匙（可省）、八角2粒、蠔油少許、水適量￼</p>

										<content:encoded><![CDATA[<p>有留意開樂思廚專頁的朋友，都會知道我很喜歡吃海鮮。除此之外，其實我也愛吃豬手。自從學懂了師傅的魷魚蝦醬炆豬手之後，常常都在家自己做，老公也十分喜歡吃。今天經過日式海鮮刺身譜，看到非常新鮮的北寄貝刺身，本想買來生吃，但靈機一族想想不如以北寄貝煮豬手，看看效果如何。於是把一本北寄貝當刺身吃，另一半則用來煮豬手。</p>
<p>豬手吸收了沙薑的香味和北寄貝鮮甜的味道，北寄貝非常爽口，與炆得稔稔的豬手相映成趣！以豬手汁拌飯吃，非常好味！過年煮也可以啊！大家收藏遲下煮啦！<img src="file:///var/mobile/Containers/Data/Application/FAB391CD-109F-448E-8B10-BC52C1CEA3F2/Library/Caches/Media/thumbnail-p4734-2436x2436.jpeg" class="size-full" data-wp_upload_id="x-coredata://22CCB28C-9F95-4B02-96E6-3654B094FE3C/Media/p4734"></p>
<p>材料：豬手一隻、沙薑約1/3隻手指尾份量（切粒）、蔥段少許、北寄貝數片、紫洋蔥半個（切絲）</p>
<p>豬手調味：魚露3湯匙、椰糖3茶匙、日式芝麻醬1湯匙、生抽3湯匙、水適量、鹽1/2茶匙</p>
<p>步驟：</p>
<p>1.豬手以跑活水方式處理後，洗淨及除去雜毛，備用。</p>
<p>2. 拌勻豬手調味料，把豬手放進去，以中小火煮1小時至豬手變稔（我則用壓力煲，只處了25分鐘就可以啦）</p>
<p>3.取出豬手備用</p>
