<p>今日啲小朋友話要食剁豬肉，作為媽媽既我，當然都要自己整過屋企version 俾佢地！，就用上家傳秘方啦！用手剁豬肉，雖然係麻煩啲，但認真好味，加埋喺泰國買返嚟嘅蝦米同埋魷魚仔，無得彈🤭</p>

										<content:encoded><![CDATA[<p>小時候很喜歡跟媽媽到街市買東西，但最害怕的是買魚及魷魚，因為魚兒會動來動去，仲有膠袋有魚腥味，所以小時候的我不會主動幫媽媽拎魚。而魷魚呢，通常都是冰鮮的，不會動來動去，但卻有很多黑色的墨，因害怕弄髒衣服，所以也不會主動幫媽媽拿魷魚。但是卻十分喜歡吃。</p>
<p>今天經過街市，見到有非常新鮮的魷魚筒賣，馬上買來一斤。再度豬肉檔買來新鮮的梅頭豬肉，回家就製作一道的豬肉釀魷魚筒。</p>
<p>我猜想大家都會懂得做剁豬肉，但是把豬肉樣在魷魚筒裏，魷魚的鮮味使豬肉更好味，大家不妨試試做呀！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_2959.jpg" class="size-full wp-image-5528" width="3297" height="3024"></p>
<p>材料：魷魚筒一斤（約11至12隻）、梅頭豬肉$35、冬菇三隻（浸軟洗淨）</p>
<p>豬肉調味料：生抽一湯匙、魚露一茶匙、椰糖一茶匙、麻油少許、生粉適量、生油適量</p>
<p>汁料：蠔油兩茶匙、生抽一湯匙、水少許、椰糖少許、三份水適量<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_2955.jpg" class="size-full wp-image-5529" width="4032" height="3024"></p>
<p>其他：牙籤11至12支</p>
<p>步驟：</p>

										<content:encoded><![CDATA[<p>肉餅由細到大都食得多，喜歡媽媽做的剁豬肉，用人手慢慢剁碎豬肉，口感Q彈，肉汁滿盈。以我家小朋友呢，就喜歡吃香脆十足的鹹魚煎肉餅。</p>
<p>以往都是用煎鍋來煎，雖是比較耐，也曾發生過有些剪得太燶、有些不夠靚的情況。加上鹹魚肉餅的口味較濃，不太適合小朋友食用。想想有什麼方法可以保存鹹魚肉餅的鹹香味，同時加入蔬菜的清甜。</p>
<p>路經街市時，買了十分新鮮的翠玉瓜。心想不如那一片翠玉瓜，夾肉餅裏，就好像漢堡包一樣。再以氣炸鍋處理，方便得來顏色均勻。小朋友十分喜歡。<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/12/img_4827.jpg" class="size-full wp-image-5303" width="4032" height="3024"></p>
<p>材料：翠玉瓜一個、梅頭豬肉半斤、鹹魚一小塊、蔥花少許</p>
<p>豬肉調味料：椰糖1茶匙、魚露少許、生抽一茶匙、蠔油少許、麻油半茶匙<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/12/img_4822.jpg" class="size-full wp-image-5304" width="3024" height="4032"></p>
<p>步驟:</p>
<p>1.鹹魚煎香後拆骨壓碎備用</p>

<p>3. 翠玉瓜洗淨切博片</p>

<p>5.在肉餅兩面已掃子掃上一層油</p>
<p>6.放入氣炸鍋已200度溫度先炸8分鐘，反轉肉餅再炸8分鐘即成</p>

<p>材料：青檸半個、魚露1湯匙、蒜頭2粒（切粒）、椰糖2茶匙、食水3湯匙、指天椒少許（切粒）</p>
<p>步驟：</p>
<ol>
<li>蓮藕洗淨後抺乾切薄片備用</li>
<li>豬肉切碎或攪碎後加少許豉油及糖調味，醃15-30分鐘</li>
<li>雞蛋拌混在大碗待用</li>
<li>把少許豬肉碎夾在兩片蓮藕片中間，蘸上雞蛋汁後撲上粟粉<img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/10/img_0675.jpg" class="size-full wp-image-860" width="4032" height="3024"></li>

<li>吃時配上蘸汁更好吃</li>

<p>蘸汁做法：</p>

<li>在小鍋中加入水後煮滾、加入椰糖煮融，放入蒜頭略煮後加入魚露及指天椒粒後關火</li>
<li>待涼後加入適量青檸汁即成</li>
