<p><strong>小時候爸爸很喜歡買桶蠔回家，製作薑蔥桶蠔煲</strong>,<strong>但是小時候的我不喜歡吃蠔。一方面不喜歡他滑潺潺的質感、另一方面不喜歡它的味道。但是爸爸還是要我試一下，最愛還是薑蔥蠔的蔥，以及薑蔥蠔的汁。可以吃上兩碗白飯！其實薑蔥蠔並不難煮，最重要是把蠔煎香，再煮一會兒就可以了。是一道就算放工夜都做到嘅菜式。</strong></p>

<p>材料：美國桶蠔1個、薑三片、蔥段適量、粟粉少許</p>



<p>調味料：蠔油1茶匙、生抽一湯匙、水20ml、老抽1茶匙、糖適量、紹興酒少許、生粉水少許</p>

<p>步驟：</p>



<p>1. 桶蠔以生粉洗乾淨，放進滾水中煮30秒，取出洗乾淨抹干備用</p>

<p>2. 沾上少許生粉在桶蠔上，放進已加熱的炒鍋中，煎香桶蠔兩邊，取出備用</p>

<p>3. 在陶鍋中加入少許油，爆香薑及蔥，放進桶蠔，加入紹興酒炒香，再加入調味料，煮大約3分鐘，看情況加入生粉水即可</p>

<p>薑蔥炒蠔的秘訣是在放進蠔之前，把薑蔥鋪滿在陶鍋底部，那麼蠔就不會黏在鍋底</p>

<p>一直很喜歡生蠔的鮮味，也愛其幼滑的質感。可是家中的小朋友和老公卻不喜歡吃生蠔。今天在街市買來一包急凍廣島蠔，再買來半打新鮮的法國N2 生蠔，做一個香濃美味的廣島法國生蠔湯。西式的生蠔湯其實也是誤打誤撞做出來，不可說很正宗，但味道卻十分不錯。煲湯的時候全間屋充滿着蠔香，聞到都流晒口水🤣🤣</p>

<p>材料：廣島蠔一包、法國N2生蠔6隻（也可使用其他的生蠔）、薯仔兩個（視乎大小-切粒）、甘筍半條（切粒）、雞湯500 ml、水500 ml、牛油半湯匙、香草（刁草、百里香、番茜少許-切碎）、忌廉50 ml、白酒半杯</p>

<p>步驟：</p>



<p>1. 廣島蠔以少許生粉洗淨，放入滾水煮10至15秒後取出，再沖洗乾淨備用</p>



<p>2. 法國生蠔去殼把蠔肉取出</p>

<p>3. 在鍋中加入牛油，放入薯仔甘筍爆香，加入廣島蠔略炒後注入白酒半杯，煮至酒量減一半，加入香草、雞湯及忌煮滾，中火煮15至20分鐘</p>

										<content:encoded><![CDATA[<p>今天中午時在街市看到很新鮮的生蠔，忍不住買來半斤，去炮製色香味俱全的薑蔥香炒生蠔。簡單的煮法配合鮮嫩無比的生蠔，美味營養又豐富。</p>
<p>所以說只要食材新鮮，不需要太高技巧和調味，也能煮出媲美餐廳的菜色。最重要的是無添加，食得安心又放心。</p>

<p>材料：生蠔半斤、薑三片、蔥段適量、紅蔥頭三粒切開</p>
<p>調味料：花雕酒一瓶蓋、蠔油一茶匙、生抽一茶匙、糖少許、水少許</p>

<p>步驟：</p>

<p>長大了也愛逛街市，看看東、看看西。要買海鮮的話，當然是到荃灣楊屋道街市啦！楊屋道街市海鮮品種多，非常新鮮又平宜，加上選擇多，總會找到自已想要的！</p>
<p>今天又到訪楊屋道街市，買來一箱bbq珍珠蠔。大大的一盒有成30多隻，只是$100，嘩，平到呢！今晚就用它做了一道簡單的mozzarella cheese焗蠔，簡簡單單的菜色，做party小食都一流！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/11/img_3295.jpg" class="size-full wp-image-5216" width="4032" height="3024"></p>
<p>材料：bbq珍珠蠔20隻、彩椒1-2隻（切小粒）、洋蔥1/4個（切小粒）、蒜頭4-5粒（切小粒）、忌廉半盒、乾香草少許</p>
<p>調味：鹽1/3茶匙、黑椒少許、糖少許</p>

<p>步驟：</p>
<p>1. 珍珠蠔去殼，洗淨備用</p>

<p>3. 放涼醬汁，以200度預熱10分鐘</p>
