<p>老公呢排好忙！成日都唔得閒返嚟食飯，咁我就可以偷吓懶啦😆😆😆就嚟玩一個一鑊熟，用上鑄鐵鍋，加埋粉絲，再加幾隻大蝦，簡簡單單，烚多碟菜又一餐🤣（當然老公唔喺度，仲有一個非常有要求嘅人，最後都係要整埋串燒雞肉嘅😆）</p>



<p>用鑄鐵鍋來整大蝦粉絲，唔需要加好多水份，煮出嚟嘅蝦剛剛熟，所有精華落晒粉絲嗰度！用咗一個特別嘅切蝦方法，放喺粉絲上面嘅蝦特別靚，大家快啲睇吓下面嘅食譜啦！</p>

<p>媽媽教的馬碲糕，混合粉類後需要略煮，不停攪拌，以增加彈性。火喉的控制也很重要，因為加了糖的粉漿，既杰身也容易燒焦！秘訣是用存熱佳的鍋子，在粉漿煮到稍杰的時後，立刻關火，以鍋子的餘溫把粉漿煮好，那麼就可以解決煮燶的問題了！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/02/img_5310.jpg" class="size-full wp-image-1243" width="4032" height="3024"><img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/02/img_5312.jpg" class="size-full" width="4032" height="3024"></p>

<p>自家製的蘿蔔糕，粉量比較少，蘿蔔味較重，能吃出食物的獨特味道！從小學五年級開始學習製作蘿蔔糕的我，還記得小時候要用手動刨來刨蘿白絲，一不小心就會弄傷手指😭😭😭，為了製作鮮味的蘿蔔糕，不知道交了多少次學費🤣，有自己的家後，第一件投資的是kitchenaid，有了它後做蘿蔔糕也方便了許多，但是有一些步驟還是按照媽媽所教的方法去做，就是先把所需的粉類以室溫水浸泡最少兩小時，這樣一來可以消除粉中奇怪的味道，蘿蔔味道就更突出了😍</p>

<p>材料：白蘿蔔4斤（2400g)、粘米粉360g、鷹粟粉180g、臘腸6條、臘肉一條、蝦米4湯匙、瑤柱6粒、3-4隻、水150g, 雞湯150g</p>

<p>步驟:</p>

<li>臘腸及臘肉以滾水略煮後，盛起洗淨切粒</li>
<li>冬菇以水浸軟洗淨後切粒</li>
<li>瑤柱溫水浸泡至軟</li>

<li>混合粘米粉及鷹粟粉在室溫水中，浸泡最少兩小時，盡量倒去水份<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_5107.jpg" class="size-full wp-image-1210" width="4032" height="3024"></li>

<li>白蘿蔔去頭尾後去皮，刨絲</li>
<li>在鍋中加入雞湯及水，煲滾後放入蘿蔔絲，以中火煮20分鐘再焗10分鐘，瀝乾水份，蘿蔔絲和蘿蔔水分開備用<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_5149.jpg" class="size-full wp-image-1211" width="3024" height="4032"></li>
<li>把已經放涼的蘿白水（950ml)加到粘米粉及鷹粟粉中，拌混，加入1.5茶匙鹽（咸度自行調節啊）</li>
<li>在深炒鍋中加入2湯匙油，爆香臘腸、臘肉、蝦米2湯匙、冬菇粒和一半瑤柱<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_5138.jpg" class="size-full wp-image-1212" width="3024" height="4032"></li>

<p>墨魚也是我喜歡的食物之一，尤愛墨魚膠那彈牙的口感！但由於膽固醇高，所以墨魚不能一之吃太多。這款墨魚蝦蝦籽節瓜脯，用上新鮮的有機節瓜，配以少許彈牙墨魚膠及蝦米，無論外觀，味道都很好呀💯👍🏻<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_3854.jpg" class="size-full wp-image-1094" width="3024" height="4032"></p>
<p>墨魚膠蝦米釀節瓜（3人份）</p>
<p>材料：節瓜2個、墨魚膠適量、蝦米數粒、蔥花少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_3906.jpg" class="size-full wp-image-1097" width="4032" height="3024"></p>
<p>汁料：蠔油1湯匙、豉油1茶匙、水2湯匙、糖少許</p>
<p>步驟：</p>
<ol>
<li>節瓜去皮後切成圓筒形<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_3904.jpg" class="size-full wp-image-1095" width="3024" height="4032"></li>
<li>用小匙把瓜囊去掉</li>
<li>蝦米洗淨瀝乾水備用</li>
<li>節瓜先蒸3分鐘後倒去水份，稍放涼</li>
<li>把墨魚膠放入中間位置<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_3905-1.jpg" class="size-full wp-image-1096" width="4032" height="3024"></li>
<li>加上2-3隻蝦米</li>
<li>釀好的節瓜脯多蒸8分鐘至熟</li>
<li>在小鍋中煮好汁料，如太稀可加少許生粉水，最後加入蔥花</li>
<li>把汁料淋到節瓜脯上即成</li>

<p>材料：南瓜（半個）、米一杯、鹽少許、喜歡的海鮮（今次我用了花甲、海中蝦、斑馬瀨尿蝦、花蟹、鮑魚、刀貝）<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2012.jpg" class="size-full"></p>
<p>步驟：</p>
<ol>
<li>洗淨米後以清水浸最少一小時，後瀝乾，加入少許油及鹽略醃</li>
<li>南瓜洗淨，用鹽洗擦外皮數次後切件</li>
<li>所以海鮮洗淨（花甲、鮑魚及刀貝以刷子刷洗乾淨、鮑魚去除鮑魚嘴及內臟、海中蝦及斑馬瀬尿蝦略洗、花蟹洗淨斬件去腮）</li>
<li>在鍋中加入米、南瓜及水，煮滾後放上蒸架</li>
<li>蒸架下層放入蟹及鮑魚等<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2014.jpg" class="size-full"></li>
<li>蒸架上層放刀貝、花甲及斑馬瀨尿蝦<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2015.jpg" class="size-full"></li>
<li>大火蒸8分鐘，上層的海鮮即可吃<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2016-1.jpg" class="size-full"></li>
<li>下層要多煮最少7分鐘</li>
<li>上層吃完後可放海中蝦蒸3-4分鐘至熟</li>
<li>此時的粥就差不多煮好只要加少許鹽已經好美味了<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2017.jpg" class="size-full"></li>
