<p>今天唔食三黃雞，試吓食走地雞。朋友介紹食呢一隻清遠鳳凰雞，脂肪比較少，皮比較脆。爸爸教落，要試一隻雞是否好食，就要用最原始嘅方法-白切。但係我由細到大都麻麻地白切雞，都係鍾意有少少味嘅雞多啲！所以今日就自創了這道花雕蒜香清遠鳳凰。</p>



<p>用上白切的方法來做，加入了花雕酒、芹菜及蒜頭這些香料，此雞肉帶有淡淡的香味。在雞的上面加上了炸香的蒜粒及新鮮的砂礓，為菜式增加一點層次。大家也試試用這個方法來做啦！</p>

<p>材料：清遠走地雞一隻（大約2斤）、芹菜兩棵（只要莖部）、蔥段適量、薑兩片、花雕酒半杯、雞湯三杯、水兩杯、蒜頭四粒</p>

<p>砂礓蒜頭汁：蒜頭七至八粒、新鮮砂礓一小粒、生抽適量、糖少許</p>



<p>步驟</p>



<p>清遠雞洗淨，以鹽醃最少3小時，過夜更佳</p>



<p>在炒鍋中爆香薑片、蒜頭、芹菜及蔥段</p>

<p>放入清遠雞，略煎香外皮後花雕酒至香氣四溢</p>

<p>加入雞湯及水，水量大約蓋過雞便可以，直至水煮滾後，蓋上蓋子關上火，焗20分鐘</p>

<p>20分鐘後把雞反轉，煮滾水，蓋上蓋子關上火，再焗20分鐘</p>



<p>在烹煮雞的時候，可準備砂礓蒜頭汁：把蒜頭及砂礓切粒，爆香後加入生抽及糖即成</p>



<p>把煮好的雞放進冰水中降溫，切件後放上砂礓蒜頭汁即可</p>
