<p>冬天的時候大家都喜歡吃黑草羊，因為食完之後身體暖笠笠，在寒冬下吃非常美味！最近也有很多朋友訂了羊腩煲，雖然羊腩煲很美味，但是坊間很多地方都有得吃，除了羊腩煲以外，究竟要用咩方法製作黑草羊比較好？</p>



<p>大家都知道，黑草羊羊味比較重，所以中國人一般以很多香料來炆煮。那麼我就想，如果用青咖喱來煮，加上一些西式的香草，效果不知道會如何！</p>



<p>昨天到油麻地買完金箔後，就去探望羊腩叔，他二話不說拿出了一隻羊腿，說客人通常只要羊腩，不要羊腿。售不出去，那麼我就買下來啦！在油麻地街市也買來新鮮的香草及新鮮的椰汁，回家後就用他來製作午餐吧！</p>

<p>材料：黑草羊前髀一隻、新鮮椰汁斤半、青咖喱醬1湯匙、Rosemary 適量、橄欖油少許、乾的百里香 一茶匙、鹽1/3茶匙（醃羊髀用）、蒜頭三粒（切片）、蕃茜適量、薄荷葉少許</p>

<p>步驟：</p>



<p>1. 羊髀洗乾淨後以鹽、少許橄欖油及乾百里香最少醃3小時</p>

<p>2. 在羊髀上𠝹上小孔，把蒜頭片、少許</p>

<p>3. 在平底鍋中加入少許油，放進羊腿煎香，把羊腿至於一邊，加入青咖喱醬炒香、逐少加入椰汁至出油</p>

<p>4. 直至所有椰汁加入後，加入調味料至味道適合及香草（蕃蕃、Rosemary 、少許薄荷葉），以小火炆煮45分鐘至1小時（視乎羊腿大小加減時間）</p>

<p>5. 測試羊腿是否煮好，只需要用小叉插進羊腿中，如能輕易插入，就代表羊腿已熟，喜歡辣的朋友，可以在炆煮的過程中加入指天椒</p>
