<p>呢排好多客人訂散水餅，或者因為開學想訂啲甜品比老師，最佳嘅選擇都係芒果撻！用上新鮮芒果做嘅芒果撻，非常好味。</p>



<p>在家自己做嘅大家，仲可以選擇自己鍾意嘅芒果：菲律賓呂宋芒、泰國水仙芒、台灣愛文芒、甚至乎喺豬腰芒都可以，各適其適，加幾多都可以自己話事🥰</p>

<p>雖然而家係五月但係天氣已經好熱，呢兩日都30幾度！日日都要外出買新鮮材料嘅我，覺得真係好熱好熱呀！所以要做一啲消暑嘅甜品來食下先。</p>



<p>途經九龍城嘅時候買咗一啲好靚嘅芒果，因為小朋友麻麻哋椰汁嘅味道，所以加入左一啲淡奶，又估唔到加咗淡奶之後口感非常之幼滑！非常唔錯。呢款甜品製作好簡單，小朋友都做得到，星期六日可以同小朋友一齊整吓。</p>

<p>材料：</p>



<p>芒果層材料：芒果4個、水200ml、魚膠粉18g、白糖3湯匙（甜酸度可按芒果的情況加減）</p>



<p>椰汁層材料：椰汁200 mL、淡奶200 mL（如果喜歡椰汁味重啲嘅話可以加多少少椰汁）、魚膠粉18g、白糖五湯匙</p>

<p>步驟</p>



<p>1. 把椰汁層材料放進小鍋中，首先拌混（最緊要拌勻魚膠粉），再用慢火加熱，直至所有材料混合為止，放涼用</p>

<p>2. 把芒果層的其中兩個芒果切粒，另外兩個芒果加入200 mL的水，以攪拌機攪拌成芒果汁</p>

<p>3. 把芒果汁及糖放在小鍋中，加入魚膠粉拌勻，再用慢火加熱直到所有材料混合為止，放涼待用</p>

<p>4.在容器掃上少許油，首先把椰汁層的材料加進，放入雪櫃雪20分鐘</p>



<p>5. 取出後把芒果層的材料加進，再把芒果粒放在上面，放雪櫃再說1小時以上</p>

<p>很多朋友問我停課期間小朋友在家中有什麼做呢？我的女兒和我一樣也十分喜歡烹飪，年紀小小的她會在星期日姐姐放假的時候幫我們煮早餐。今天她說想做下午茶給我們吃，在外出買外送新鮮材料的時候，也不忘替她買材料做心太軟。</p>



<p>還記得小學四年級的時候，我也嘗試自己做蛋糕。那時候媽媽不喜歡我常常進入廚房搞搞震，我就趁着家人睡着了，偷偷地爬進廚房，還用英粟粉、糖、水攪拌好，就放進鑊中蒸（是啊以前家中沒有焗爐，見到媽媽蒸魚，就想照板煮碗，把蛋糕放進去蒸），最後呢當然就是失敗了，還弄到滿地都是英粟粉，翌日被媽媽罵了一頓😂😂😂</p>



<p>現在呢，女兒比較幸運一點，我常常鼓勵煮食。今天第一次製作心太軟，跟着我的食譜來做，一點也沒有問我。雖然做出來的心太軟的心不太軟（原因是有人偷食了朱古力，致使朱古力的份量不夠🤣），但是十分美味，我要俾10個like佢🥰🥰🥰</p>

<p>材料：低筋麵粉50克、70%朱古力粒200克、糖霜170克、無鹽牛油150克、雞蛋三個、蛋黃兩個、可可粉少許</p>



<p>步驟：<br />1.牛油室溫放軟切塊，與朱古力粒放在碗中，以熱水座溶，拌勻即成朱古力醬。</p>

<p><span>在東南亞，蝶豆花被當成是一種天然食用色素。在馬來西亞菜式中，它用來為糯米著色以製</span>造娘惹粽。平時我也喜歡用蝶豆花製作青檸特飲！加左青檸汁蝶豆花茶會變左紫色！非常夢幻❤️今次就係用蝶豆花會變色的特性製作啫哩，味道也很好啊😋</p>
<p>因蝶豆花內含的花青素比一般植物多10倍，因花青素有抑制血小板凝集成份，以下4類人切忌飲用啊！</p>
<ul>
<li>孕婦</li>
<li>正值經期的女性</li>
<li>準備接受手術的病人</li>
<li>正服用抗凝血藥的患者</li>
</ul>
<li>大家要留意啦❗️</li>
<p>蝶豆花啫哩（6小杯份量，每杯200ml)</p>
<p>材料： 碟豆花7-8朵、水1200ml、青檸1.5個、白糖120g、魚膠片2片（約30g)、室溫水適量</p>
<p>椰汁裝飾：椰汁100 ml、白糖適量、魚膠片半片（約7g)</p>

<li>魚膠片以室溫水浸軟</li>
</ol>

<li>蝶豆花洗淨後泡進熱水浸5分鐘，隔去蝶豆花後加份白糖拌融</li>
<li>把浸軟了的魚膠拌入至融解</li>
<li>把一半的蝶豆花啫哩液（600ml)放進小杯，待涼後放雪櫃最少3小時至凝結<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2881.jpg" class="size-full"></li>
<li>另一半的啫哩液加入青檸汁至喜愛的紫色（留意，如喜歡味道甜一些，可在啫哩液還熱時加入少許白糖）<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2882.jpg" class="size-full"></li>

<p>《木瓜椰奶凍食譜》</p>
<p>材料： 馬來西亞/夏威夷木瓜一個、椰汁100ml、白糖適量、魚膠片兩塊/魚膠粉5克<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_8694.jpg" class="size-full wp-image-1699" width="4032" height="3024"></p>

<p>A.白色層(1)椰汁 200ml (2) 木薯粉140 g (3) 粘米粉 50 g （4）水 300 ml （5） 椰糖 70g</p>
<p>B.綠色斑蘭層（1） 椰汁200ml (2) 木薯粉140 g (3) 粘米粉 50 g （4）水 330 ml (5) 斑蘭葉6塊（6) 椰糖70 g<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_8696.jpg" class="size-full wp-image-1708" width="3024" height="4032"></p>
<p>步驟：</p>
<ol>

<li>A 材料中的水及木薯粉粘米粉拌好，加入放涼了的椰汁</li>

<p>材料：糯米1杯、芒果2個</p>
<p>汁料A: 椰汁1杯，1/3 杯白糖（好肥😱）、1 湯匙鹽、2塊斑蘭葉👈🏻👈🏻此乃曼谷人的口味，也可自行減糖及鹽但不能減太多，否則糯米就沒味了🤣</p>
<p>Topping:椰汁1杯，1/4 湯匙鹽，2湯匙粟粉</p>
<p>步驟：</p>
<ol>
<li>糯米洗淨，以室溫水浸3小時</li>
<li>米放入鍋中，加入兩片斑蘭葉、蒸20-30至熟（即透明）<img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/07/img_5520.jpg" class="wp-image-111 size-full" height="4032" width="3024"></li>
<li>在小鍋中汁料A煮滾，取走斑蘭葉，放入煮好了的糯米，汁的份量應剛蓋過米，大多會好 sticky,味道應是略甜帶點咸 味，蓋上蓋等10分鐘，略為搞拌再等10分鐘</li>
<li>topping 材料放另一小鍋中，先用匙拌混，再以中細火煮杰即成</li>
