										<content:encoded><![CDATA[<p>童年時跟家人回鄉探親時，常常也會吃砵仔焗魚腸這一道餸菜。小時候的我不太喜歡魚腸的味道，但就愛脆卜卜的油炸鬼。長大後覺得魚腸味道甘甘香香的，很美味！但是吃內藏還是不大健康，今天突然想起這度名菜，忽發奇想以鮮甜的珍珠貝代替魚腸，未知味道如何？用珍珠貝雖沒有了魚腸的獨特香味，但貝仔甜度十足，大人小朋友都愛吃。脆卜卜的油炸鬼依舊是靈魂，加上製作容易，夜收工也可煮到啊❤️😋<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_4002.jpg" class="size-full wp-image-1113" width="3838" height="2802"></p>
<p>《珍珠貝蒸蛋-4人份》</p>
<p>材料：珍珠貝半斤、油炸鬼1條、雞蛋3隻、水適量（份量是雞蛋總份量的2.5 倍）蔥花少許、鹽少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_3995.jpg" class="size-full wp-image-1114" width="4032" height="3024">步驟：</p>
<ol>
<li>珍珠貝刷洗乾淨、油炸鬼切件</li>
<li>雞蛋去殼拌勻，以量杯查看三隻雞蛋的總份量（我的是140毫升）<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_3998.jpg" class="size-full wp-image-1115" width="3024" height="4032"></li>
<li>燒熱鍋具，把珍珠貝放進鍋具煮大約3分直至所有珍珠貝開口</li>
<li>盛起珍珠貝及留珍珠貝湯汁過濾後備用</li>
<li>把珍珠貝汁加入雞蛋液（如沙汁不夠雞蛋總量之2.5倍則加上水）<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_3999.jpg" class="size-full wp-image-1116" width="3024" height="4032"></li>
<li>把珍珠貝置於碟中，碟邊放上油炸鬼件後，再注入雞蛋液，以蒸爐蒸15分鐘至熟後取出<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/01/img_4001.jpg" class="size-full wp-image-1117" width="4032" height="3024"></li>
<li>在鍋中加入少量水後放進少量鹽及魚露，調味至合適後加入少許生粉水至杰，關火加入蔥花，把汁注進雞蛋即成</li>
