<p>今日要陪老公去醫院睇醫生，一等就等咗四個鐘頭，返到屋企已經好晏啦！加上姐姐今日放假，元旦本身諗住煮得豐富啲，但係老公又病咗食唔到就簡單咁煮啦！硬係覺得元旦要食西餐，簡簡單單整個西式嘅周打蜆湯，用上新鮮嘅大蜆去整，新鮮又好味！</p>

<p>小時候同媽媽一齊去街市買餸，間中都會見到響螺，仲記得第一次見既時候問媽媽：「嘩！好大隻貝殼呀！」，媽咪答：「呢d叫響螺呀！ 好有益架！」，記係咁，試左人生第一次既響螺湯，實係一試愛上！鮮甜無比既咪道，無其他海鮮可以媲美💕💕是非常美好的童年回憶！</p>



<p>隨住年紀增長，響螺既價錢亦都有所增長，同埋有時係有錢都買唔到，因為海鮮檔留起晒俾熟客。</p>



<p>前排有幸買了一隻大大隻，再過幾日又買左10幾隻細細隻，長大了的我煲來用爸媽分享，鮮甜味依然😍😍</p>

<p>最近疫情非常嚴重，每天都收到大家的SOS短訊，關於消毒spray 仲有冇得訂、如何使用。好返嘅朋友就問我有冇啲湯水可以補下身，既然大家問到我就梗係要問下中醫朋友，用啲乜嘢嚟煲湯又好味又健脾潤肺呢？</p>



<p>中醫朋友回覆，可以用百合、海底椰、圓肉等等健脾益胃補肺嘅食材。至於肉類，用鷓鴣係唔錯！</p>



<p>我都記得以前小朋友病嘅時候成日都咳，仲要咳唔斷尾，我就會煲鷓鴣湯俾佢哋飲，細細隻嘅鷓鴣既清甜又有益。尋日有啲時間，去探望供應花膠俾我嘅食材供應商，順手問吓佢有冇無激素鷓鴣，原來佢都有賣（價錢當然比一般鷓鴣貴啦），馬上買來兩隻，再喺佢嗰度買埋其他優質嘅材料，今日就煲一煲湯試吓好唔好飲先！</p>



<p>用LC嚟煲湯，非常鎖水，煲咗大約兩個鐘頭有得飲啦！未落鹽試一試味，非常清甜！落埋鹽再試一試味，冇得頂！</p>

<p>原來大家都咁鍾意飲羅宋湯，個post出咗一個鐘頭已經有好多朋友話要食譜。好啦見呢排得閑啲快啲寫食譜俾大家先！</p>



<p>去茶餐廳食飯，通常套餐都會跟個湯：紅湯或者白湯。每一次我都係選擇飲羅宋湯嘅，不過喺茶餐廳飲嘅羅宋湯往往都只有茄汁嘅味道，欠缺蔬菜嘅鮮味，加上落咗味精，飲完之後好口渴！</p>



<p>其實自從中學開始，我間唔中都會喺屋企煲羅宋湯做下午茶，妹妹同埋我兩個人可以飲晒一煲羅宋湯！好癲！</p>



<p>講返今日個羅宋湯先，加入左新鮮牛展同埋紅菜頭嘅羅宋湯，配以有機嘅甘筍、西芹、蕃茄等等嘅蔬菜，用先炒香嘅方法處理蔬菜，將佢嘅鮮甜味釋放出來，未落鹽試味已經覺得好好味。</p>



<p>間唔中清清地煲個羅宋湯，食塊自家製嘅蒜蓉包，幸福就係咁簡單！</p>

<p>小時候同家人去茶樓食飯，最鍾意叫嘅係冬瓜盅！除咗賣相好靚之外，冬瓜盅入面嘅湯仲要好好飲，清甜得來帶海鮮嘅味道。後來爸爸話不如試吓喺屋企做冬瓜盅，馬來迷你冬瓜，一個冬瓜開兩份，四個人飲啱啱好。</p>



<p>今天路經街市，突然間想做冬瓜盅，但就搵唔到迷你冬瓜。於是買來三斤普通嘅冬瓜，加入蝦、花甲及魷魚等等嘅海鮮，不消1小時，消暑嘅冬瓜盅就搞掂啦！大家有時間不妨喺屋企試吓整，無添加又好味。</p>

<p>材料：冬瓜三斤/迷你冬瓜一個、草菇四両（一開二）、日本花菇四至五粒（浸軟洗乾淨切片或切粒）、蝦米一湯匙（洗淨浸軟）、瑤柱少許、夜香花少許、雞湯2L（我是用雞殼熬湯兩個鐘）</p>

<p>步驟：</p>



<p>1. 冬瓜洗乾淨後用匙羹或走冬瓜中間的肉（需要沿邊大約1 cm的肉），用小刀切去冬瓜皮（zig zag形切）</p>

<p>2. 把冬瓜放進蒸爐以100度蒸8分鐘，再把中間多餘的肉刮去，之後把冬瓜肉切粒</p>



<p>3. 在煲中煮滾雞湯，放入冬瓜粒、花菇、蝦米及瑤柱煮滾後細火煮10分鐘</p>

<p>4. 把煮好的湯放進冬瓜盅，置入海鮮在上，以一百度蒸煮6-8分鐘，加入適量的食鹽，最後放入夜香花即成</p>

<p>大家好耐都冇去過旅行啦！講起去旅行我最鍾意係去泰國同埋日本。去日本嘅時候最鍾意係飲罐裝粟米湯。仲記得有一次冬天嘅時候去旅行，那天特別凍，小朋友都凍到震晒！喺條街度見到有飲品機售賣罐裝粟米湯，馬上買來幾罐暖下身！濃濃嘅粟米湯，又甜又滑！飲完之後個身即刻變得暖笠笠😍😍</p>



<p>果次嘅粟米湯係我飲咁多粟米湯入邊最好飲嘅！雖然係罐頭但係滿載着旅行嘅回憶❤️❤️</p>



<p>上星期日，同小朋友去農場，又摘左幾支新鮮既白粟米，再加埋街市買既有機甜粟米，馬上做個粟米湯，尋回那些年在日本飲到既味道😆😆😆</p>

<p>材料：本地甜粟米2支、日本北海道白粟米2支、甘筍半條、白洋蔥1/4個、薯仔一個（大size)、鮮奶一盒236ml、鮮忌廉100ml、雞湯1L、蒜頭2粒（拍扁）、刁草少許（可省）、牛油少許（好重要‼️）</p>

<p>今天到大圍街市去相熟的海鮮檔買海鮮，居然發現有新鮮的響螺頭賣！大家都知道我很喜歡海鮮，響螺頭湯是我頭號最愛的湯，但平時還是用雪藏響螺頭，或者用響螺乾，因為新鮮的響螺頭不常見，就算有價錢都不便宜。今天的價錢還算合理，所以就買來一斤，用來煲一個好喝的湯，慰勞一下自己吧！加了花膠的響螺頭湯，骨膠原豐富，響螺頭又十分鮮味，大滿足😊😊</p>

<p>步驟</p>



<p>1. 新鮮響螺請海鮮檔代勞去掉硬殼</p>



<p>2. 回家後用牙刷刷洗乾淨，剪開響螺，去除內臟</p>

<p>3. 豬展洗乾淨和已洗乾淨的響螺一同進行跑活水之後洗淨</p>

<p>4. 在鍋中燒熱水，把所有材料加進（花膠除外），以中火煲滾，轉小火煲1小時，加入花膠，以小火再煲半小時</p>

<p>到西餐廳吃飯時，常常都會有餐湯贈送：紅湯定係白湯，一般而言我都會揀紅湯，原因是白湯每一次飲落去都係成口麵粉，欠缺鮮味、海鮮也吃得出是急凍的海鮮🙈🙈🙈，今天是女兒的生日，她突然間想飲白湯，就做一個表面看似簡單，實際步驟不少的周打蜆肉湯。</p>



<p>這個湯看來與普通的西餐廳沒有兩樣，卻是以新鮮魚湯做湯底及用上新鮮大蜆，女兒一飲，覺得非常美味，大家也試試煮吧！</p>

<p>魚湯底材料：海魚4條（我用了紅衫魚）、水三杯、薑兩片</p>



<p>蜆湯湯底：大蜆一斤、水300 ml</p>



<p>香草材料：蒜頭四粒、薯仔兩個、甘筍半條、洋蔥半個（以上全部切粒）、百里香適量</p>



<p>其他材料：煙肉3塊（切粒）、鮮奶一盒220ml、鮮忌廉一盒、白酒100mL</p>

<p>步驟：</p>



<p>1. 先準備魚湯底：海魚洗乾淨，抹乾水份，放在已經燒熱的炒鍋中，加入薑片煎香後，加入熱水煮15分鐘，加去魚肉及魚骨，即時成為魚湯底</p>

<p>2. 準備蜆肉湯底：在小鍋中加入300 mL的水，放入已經洗乾淨的大蜆直至大蜆開口，取出蜆肉，也把蜆水留用（最好先隔掉泥沙）</p>

<p>3. 在小鍋中先炒香煙肉，盛起備用</p>

<p>4. 在鍋中爆香蒜頭、洋蔥再加入甘筍及薯仔爆香，加入白酒煮一會</p>

<p>5. 把魚湯及蜆湯加入香草材料中，煮10分鐘</p>

<p>6. 加入牛奶及忌廉，再煮10分鐘</p>

<p>7. 把所有材料放進攪拌機攪碎，使用隔篩隔渣</p>

<p>8. 周打湯底回鍋煲滾，加入蜆肉（也可加入其他海鮮）、百里香及煙肉。最後加入適量的鹽調味即可以</p>

<p>一直很喜歡生蠔的鮮味，也愛其幼滑的質感。可是家中的小朋友和老公卻不喜歡吃生蠔。今天在街市買來一包急凍廣島蠔，再買來半打新鮮的法國N2 生蠔，做一個香濃美味的廣島法國生蠔湯。西式的生蠔湯其實也是誤打誤撞做出來，不可說很正宗，但味道卻十分不錯。煲湯的時候全間屋充滿着蠔香，聞到都流晒口水🤣🤣</p>

<p>材料：廣島蠔一包、法國N2生蠔6隻（也可使用其他的生蠔）、薯仔兩個（視乎大小-切粒）、甘筍半條（切粒）、雞湯500 ml、水500 ml、牛油半湯匙、香草（刁草、百里香、番茜少許-切碎）、忌廉50 ml、白酒半杯</p>

<p>步驟：</p>



<p>1. 廣島蠔以少許生粉洗淨，放入滾水煮10至15秒後取出，再沖洗乾淨備用</p>



<p>2. 法國生蠔去殼把蠔肉取出</p>

<p>3. 在鍋中加入牛油，放入薯仔甘筍爆香，加入廣島蠔略炒後注入白酒半杯，煮至酒量減一半，加入香草、雞湯及忌煮滾，中火煮15至20分鐘</p>

<p>4. 把湯連配料放進攪拌機中打碎蠔肉濃湯，把法國生蠔放進去煮5至10秒即成</p>
