<p>講到新鮮墨魚，好多人都只會食墨魚肉同埋墨魚鬚，其實墨魚內臟嘅墨囊含有勁黑既墨汁，墨汁營養價值高，富含了無機鹽、維生素及鈣等營養，所以如果大家如果買新鮮大墨魚既話，記得留返墨囊整意粉！</p>

<p>小時候住喺油麻地區，間唔中會去廟街或者旺角行街，周圍食嘢、周圍買嘢，好開心！</p>



<p>有陣時星期六得閒，會同妹妹去掃街，去廟街食炸大腸，大腸炸得香香脆脆，明知道唔係好乾淨都會照食，然後行去旺角食滷水大墨魚、滷水火雞腎……再去飲埋珍珠奶茶，過一個邪惡嘅週末🤣</p>



<p>呢排適逢有游水嘅大墨魚，又令到回憶喺腦裏面呼喚：快啲去食嘢啦，快啲去掃街啦！😈😈，但係，邊有時間啫😞😞</p>



<p>今日，買咗一條超級大嘅大墨魚，肉非常厚，墨魚嘅鬚仲好大添，一個人食唔晒，就同客人分享，整黑滷水大墨魚、整白滷水大墨魚，剩返個墨囊，仲可以用來整墨魚汁意粉，而家就等我哋一齊睇吓街邊檔嘅滷水墨魚係點樣整啦！屋企咁啱用晒甜醬，仲自製甜醬添，咁就唔使下下出去買啦！</p>

<p>雖然天氣仲係比較清涼，但係有時都會想食啲凍盤，尤其係宴客嘅時候，整定凍盤喺雪櫃，一拎出嚟就有得食，非常方便！</p>



<p>一向好喜歡花椒同埋八角嘅香味，帶少許辛辣而獨特嘅味道，今次就用花椒入饌，為咗唔好搶走花甲嘅清甜味，用咗花椒油嘅方法去製作，加上中式黑醋及指天椒，一道開胃既菜式勁快手完成！</p>

<p>每一次食北海道元貝嘅時候，都係用蒜蓉粉絲去蒸，今晚食西餐，想用個西式嘅方法去處理北海道元貝，咁啱屋企有一啲用剩咗嘅金不換葉，不如就用來做金不換牛油，加埋麵包糠用嚟焗北海道元貝，唔知道效果如何？</p>



<p>北海道元貝先起肉，然後煎香，再加入預先整好咗嘅香草牛油同埋麵包糠，外脆內軟，帶子因為先行煎過，能夠鎖住肉汁，入邊仲好嫩滑，平時食又得，宴客都絕不失禮！</p>

<p>今日係大年初一，我相信大家嘅Facebook都應該係俾啲賀年嘅訊息洗咗版㗎啦，咁我就特別啲出個東南亞食譜俾大家啦！</p>



<p>新加坡辣椒膏炒蟹，大約10年前左右帶嗰陣時只有一兩歲嘅阿女去新加坡嘅時候，喺聖淘沙嘅一間餐廳食到呢一道菜式，覺得超級好味！仲記得當年嘅蟹係用一隻兩斤幾嘅大肉蟹，兩個人根本冇可能食得晒。餐廳嗰度只係可以選擇chili Crab或者黑胡椒炒蟹，感覺上黑胡椒好似好辣咁，於是就揀咗睇落去冇咁辣嘅辣椒膏炒蟹。最後只係食剩少少，帶埋返酒店第二日做早餐！</p>



<p>辣椒膏炒蟹，雖然個名叫做辣椒膏炒蟹，但係其實得少少辣，多多甜！佢同黃咖喱炒蟹有一個共同嘅地方，就係有好多蛋！老公最鍾意用啲蛋汁來撈飯！</p>



<p>今日，突然心血來潮想食，雖然買唔到當年嘅兩斤幾大肉蟹，買來細細隻12両嘅細肉蟹過吓口癮都唔錯！</p>



<p>之前問新加坡嘅朋友辣椒膏炒蟹嘅主要材料，今次自己加加減減，製作一個樂思廚版本嘅辣椒膏炒蟹，我覺得好好味喎！而阿女居然都好鍾意，仲有幾日假放，好多海鮮檔都有開門，大家快啲去試吓！</p>

<p>到餐廳吃飯時很喜歡吃墨魚汁意粉，墨魚汁的鮮味非其他的海鮮可以比較，但係喺餐廳食墨魚意粉食完之後嘴唇變得黑黑的，有點尷尬😆</p>



<p>喺屋企煮，如果買到新鮮嘅墨魚，用墨魚汁來做意粉，非常美味！就算買不到，也可以用現成的墨魚汁來做意粉，方便快捷，味道也不錯。</p>



<p>上次的墨魚汁意粉是用新鮮墨魚汁做的，但由於過程太論盡，所以沒有拍照，下次再買到新鮮墨魚的時候再話俾大家知點樣整！</p>



<p>下面嘅食譜就用着方便嘅墨魚汁先。墨魚汁可以喺CC super 買，或者Muji買，個人比較喜歡CC super的，帶鮮味多一點，但因為有蕃茄的成份，所以有少少酸，要自行加糖及鹽調校味道。</p>

<p>因為covid的緣故，好耐好耐都無去旅行😔記得幾年前同家人去馬六甲旅行食過一個好好味既粉河粉，仲有一個好靚既名字—月光河粉🌕</p>



<p>月光河說穿了就係海鮮濕粉河粉，運用僅餘的回憶，用上蠔油、ABC醬料、生抽、老抽…….等等製作。生雞蛋放在河粉上，就好好似一個月亮咁🌝，加左生雞蛋的河粉份外幼滑！昨天本身打算買蘭王蛋，可惜買不到，就用另一款可生食既雞蛋啦！</p>



<p>無得去旅行，自己在家做，在家泡製一個小旅行啦！</p>
