<p>泰菜同西餐有啲不一樣嘅地方，就係泰菜嘅沙律唔係作為頭盆上菜，而係同主菜、湯類、咖喱等等一齊上菜。食一啖飯、食一d沙律、飲啖湯……全部嘢一齊食，所以泰菜中嘅沙律有陣時都會有肉類，可以當主菜咁食。</p>



<p>泰式燒豬頸肉，好多人都食過，亦都好喜歡食，但係豬頸肉比較肥膩，將豬頸肉加入沙律嗰度不但可以去除油膩嘅感覺，仲為豬頸肉添加咗清新嘅香草味道，加上特製嘅泰式醬汁，味道更加立體，大家不妨試吓！</p>

										<content:encoded><![CDATA[<p>到曼谷旅行常常周圍食食食！高級餐廳有、靚靚cafe有、街邊小店也有！而在街邊小店常常見到有青木瓜沙律售賣，見泰國姐姐們都好像執藥般先執少少木瓜絲、再執少少豆角、蕃茄、還有生蟹仔！（無錯是生的呀，雖然我為食也不敢吃，如果吃了腸胃不適應就甚麼也不能吃了！），放入木盅盅兩盅，再加入醬料，最後加入蝦米及花生就完成！</p>
<p>今天到九龍城洗車（已兩個月無大洗，好dirty!)，泊好車後又是shopping的時間，買了非常新鮮的青木瓜、還有泰式青豆角、蕃茄仔及花生，回家做一個沒有生蟹仔的青木瓜沙律啦！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/07/img_5755.jpg" class="size-full wp-image-2455" width="3605" height="3024"></p>
<p>材料：青木瓜1個、泰國蕃茄仔3個、紅蔥頭3粒、蝦米2湯匙、花生2湯匙</p>
<p>汁料：羅望子汁2湯匙、椰糖2湯匙、水少許、魚露少許、青檸汁少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/07/img_5756.jpg" class="size-full wp-image-2456" width="4032" height="3024"></p>
<p>步驟：</p>
<p>青木瓜切絲/刨絲，以木盅略盅（我沒有木盅，所以用石盅輕力盅幾下）<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/07/img_5757.jpg" class="size-full wp-image-2457" width="3024" height="4032"></p>
<p>蕃茄仔切開（一開四備用）、青豆角切段（也盅一盅）、紅蔥頭去皮切絲<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/07/img_5760.jpg" class="size-full wp-image-2458" width="3024" height="4032"></p>
<p>蝦米及花生洗淨後炸香</p>
<p>羅望子以熱水浸好，取汁用</p>
<p>在小鍋中加入椰糖及水，煮融椰糖至呈焦糖狀</p>
<p>在沙律碗中加入所有材料（除蝦米及花生），先加入1湯匙魚露及1湯匙羅望子汁及半湯匙焦糖，拌好試味，按口味加減汁料<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/07/img_5761.jpg" class="size-full wp-image-2459" width="3024" height="4032"></p>
<p>最後加入花生（盅碎）及蝦米即成</p>

<p>青芒果沙律，是很地道的泰式沙律，上至高級餐館，下至夜市都有售。甜甜酸酸的芒果味，配以炸香了的蝦米及腰果，添了脆脆的口感。而薄荷葉呢？就為整道沙律增添清新的味道。自己做，醬汁喜歡甜一點又何、酸一點也可呢！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/06/img_3611.jpg" class="size-full wp-image-2247" width="3024" height="4032"></p>
<p>材料：青芒果2個（我選了一個甜的一個酸的因為我怕酸🤣比例是酸比甜以7:3做）腰果適量、蝦米適量、紅蔥頭6粒、薄荷葉適量<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/06/img_3616.jpg" class="size-full wp-image-2248" width="4032" height="3024"></p>
<p>沙律汁：水3湯匙、椰糖2湯匙、魚露1-2茶匙、青檸汁約2茶匙、蒜頭3-4粒、指天椒半隻（可加減）</p>
<p>步驟：</p>

<li>薄荷葉洗淨備用</li>

<li>準備沙律汁：以石盅盅爛已洗淨及去皮的蒜頭及指天椒。在小鍋中煲滾水，加入椰糖煮至杰身後放涼，加入魚露拌混，放入蒜頭及指天椒拌混，最後加入魚露試味，注意沙律汁不能太稀，應帶有光澤<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/06/img_3627.jpg" class="size-full wp-image-2253" width="3024" height="4032"></li>

										<content:encoded><![CDATA[<p>上次去曼谷join 了一個cooking class,教泰北肉碎沙律，覺得味道ok 但未至於係超好食。直到去年除夕party,Tammy 教主叫我地負責整肉碎沙律😅，點知&#8230;.. 跟cooking class 的receipt 整&#8230;.. 唔係好靚仔😭&#8230;.. 得教主指點後再試，今次呢個沙律無得彈&#8230;..肉碎煎得香香的，配合新鮮既薄荷葉、香茅、紅蔥頭、炒米粉同醬汁 包在生菜內食，又香又脆 真係一試難忘呀😍 事不宜遲，同大家開心share 一下</p>

<p>材料：泰式柚子一個、香茅4支、紅蔥頭3粒、檸檬葉3-4片、炒米粉適量、蝦米適量、腰果適量</p>

<p>材料(沙律醬):</p>
<p>椰汁 100ml</p>
<p>椰糖適量、泰式辣椒醬膏1湯匙、青檸2‐3 個</p>
<p>沙律醬製作步驟:</p>
<p>1. 在小鍋中放入椰汁及椰糖至糖融解及油脂分離</p>
<p>2. 加入泰式辣椒醬膏至橙紅色帶油光</p>
<p>3. 逐少加入青檸汁試味及少許鹽即成</p>
<p>沙律製作步驟:</p>
<p>1. 泰國金柚去皮切細件</p>
<p>2. 香茅取中心嫩位置切片、紅蔥頭切片</p>
<p>3. 檸檬葉切細絲</p>
<p>4. 蝦米及乾辣椒放滾油炸香</p>
<p>5. 腰果以石摏摏碎</p>
<p>6. 把材料拌好，加上適量沙律醬，最後加入炒米粉即成</p>

<p>煎蛋脆脆既口感加埋蕃茄甜甜酸酸既味道再配合莞茜芹菜既獨特香味，就係一貫的泰味，材料易買，大家不妨試下啦😀😀😀☺️</p>

										<content:encoded><![CDATA[<p>愛海鮮既我，除左龍蝦之外，最鐘意既就係蟹🦀🦀 花蟹、石蟹、藍蟹、長腳蟹、毛蟹、羔蟹通通都愛😍😍😍但新鮮花咲蟹都係第一次食🤤🤤蟹羔鮮味道爆燈⭐️⭐️⭐️⭐️適逢好友送左一個樹上熟大芒果俾我，就整左呢個芒果蟹肉沙律啦</p>

<p>材料：花咲蟹一隻（約2斤半）、水仙芒果1/4個，豆角2條、B.B. 菠菜苗6塊、檸檬葉2塊、車厘茄3個、泰式粉絲1/4 包、泰式炒米粉適量、粟米1/4條</p>

<p>調味：魚露少許</p>
<p>步驟：</p>
<ol>
<li>蟹先洗淨後蒸熟（蟹肚向上，2斤半蟹蒸了20 分鐘剛好），待涼後在蟹蓋取出蟹羔，將蟹身拆肉、蟹腳去殼<img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/07/img_5582.jpg" class="size-full wp-image-91" height="3024" width="4032"></li>
<li>水仙芒果切粒、豆角洗淨切成約3cm 長，灼2分鐘至8成熟、粉絲浸軟後灼2分鐘</li>
<li>b.b菠菜苗切碎、車厘茄1開4、檸檬葉切幼絲、粟米蒸10分鐘後起出粟米粒</li>
<li>在mixing bowl 內放入所有材料及魚露拌混後再放回蟹蓋內即可，吃時加點青檸汁、鮮味即時提昇啊❤️❤️</li>
