										<content:encoded><![CDATA[<p>《樂思廚泰式食譜-黃咖喱炒大頭蝦》</p>
<p>今天買來一斤新鮮游水的大頭蝦做冬陰功湯卻用不完，突然很想吃黃咖喱大頭蝦，於是就用剩下來的六隻大頭蝦去做這道菜式。</p>
<p>用上手標牌的黃咖喱粉，咖喱味非常香濃但又不辣！加了雞蛋用來拌飯一流！加上做法簡單，想做一餐泰味十足晚餐的你快快跟住做啦！</p>
<p>材料:大頭蝦6隻、洋蔥¼個、芹菜少許、蔥段適量、指天椒兩隻（可省）、蒜頭(略拍）</p>
<p>黃咖喱汁材料：蠔油半湯匙、生抽半湯匙、魚露一茶匙、椰糖一茶匙、泰式chili paste兩茶匙、淡奶250ml、雞湯少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/11/img_4148.jpg" class="size-full wp-image-5255" width="3984" height="3024"></p>
<p>其他：泰式黃咖喱粉一茶匙、雞蛋一隻</p>
<p>步驟：</p>
<p>1. 大頭蝦洗淨去除沙囊抹干備用</p>
<p>2. 洋蔥切件、芹菜（分開莖及葉）及蔥切段（分開蔥白和青蔥）指天椒切片備用</p>
<p>3. 黃咖喱汁料放碗中攪拌好備用<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/11/img_4145.jpg" class="size-full wp-image-5257" width="3024" height="4032"></p>

										<content:encoded><![CDATA[<p>在曼谷街市買了超大多膏的大頭蝦，除了蒜蓉焗之外，用來製作冬蔭功湯一流！市面上的冬蔭功湯，因加入了泰式辣醬（chili paste)，所以呈紅色和有油光，大家愛用的冬蔭功醬也如是，因有chili paste的成份所以帶紅，但是，師傅教煮的冬蔭功，全都是用新鮮材料及海鮮，沒帶加chili paste，那裡紅油從何來呢？就是從大頭蝦的蝦膏而來啊😋靚的大頭蝦，蝦膏一大塊、又香又鮮味！加上其他海鮮及鮮淆雞湯底，認真是飲左過唔到轉頭呢！</p>

<li>魷魚洗淨去墨囊、花甲洗淨先煮熟去沙、象拔䂜仔切片</li>

<li>注入雞湯，加入南薑、莞茜根中火煮5-10分鐘</li>

<li>扔掉所有香草</li>

<li>加入象拔䂜片及魷魚略煮後盛起</li>
<li>在鍋中加入切碎了的辣椒及菇類，加入調味料試味，如不夠咸加入鹽及魚露、不夠甜加入椰糖、不夠辣加入辣椒（此階段應沒有酸味），關火加入青檸汁至合適味道<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_7869.jpg" class="size-full wp-image-1586" width="3024" height="4032"></li>

										<content:encoded><![CDATA[<p>香港人都很喜歡食海鮮🦀🦑🦐🐙，而曼谷人則愛吃河鮮，尤愛吃大頭蝦。泰式冬蔭功湯必要有大頭蝦才能帶出鮮味，在曼谷，當地人也會以炭燒大頭蝦，口感脆脆的，一個人可食一打！</p>
<p>而在香港呢，游水大頭蝦也常常有賣，但鮮味不泰國的。今次介紹的，是超大的XO大頭蝦，蝦膏超香濃，以蒜頭豉油焗，門口都聞到！加上煮法簡單，在家也能煮到！重點是，香港買唔到，所以如果真係想食，去曼谷的時候記得要買呀！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/02/img_7223-2.jpg" class="size-full wp-image-1503" width="2931" height="1778"></p>
<p>《樂思廚-曼谷限定爆膏香蒜大頭蝦（2人份🦐》</p>
<p>材料： 大頭蝦1隻(我的約400g)、蒜頭5-8粒（視乎大小）、豉油2湯匙、油3湯匙、鹽少許、胡椒粉少許</p>
<p>步驟：</p>

<li>大頭蝦剪去鉗及腳（鉗可留來整柚子沙律）</li>

<p>材料（2人份量）：大頭蝦腳4條（如沒有大頭蝦，可用中蝦代替）、冰海蝦2隻（用新鮮更好味🤤）、蒜頭3瓣、紅蔥頭2粒、咸魚肉少許、蔥花適量、雞蛋1.5隻、花生碎（可省）、青檸1/3個（可省）、飯3碗<img src="//"></p>
<p>調味：鹽少許、魚露少許</p>
<p>步驟：</p>
<ol>
<li>蒜頭及紅蔥頭切幼粒，青蔥切花</li>
<li>大頭蝦腳去殼取肉，以滾水煲熟後切粒<img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/08/img_8786.jpg" class="size-full wp-image-594" height="4032" width="3024"><img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/08/img_8787.jpg" class="size-full wp-image-595" height="3024" width="4032"></li>
<li>冰海蝦以活水喉水沖至融冰後去殼及蝦腸</li>
<li>雞蛋拌混備用</li>
<li>在鍋中加入油，中火煎海蝦至熟後盛後備用</li>
<li>在同一鍋中加入蒜頭及蔥頭炒香，加入咸魚肉略炒，放入白飯炒香放一邊<img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/08/img_8739.jpg" class="wp-image-596 size-full" height="4032" width="3024"></li>
<li>在鍋另一邊放入雞蛋煎至8成熟，混合白飯炒至粒粒分明，以鹽及魚露調味<img src="//"></li>
