										<content:encoded><![CDATA[<p>炎炎夏天有時都會想吃邪惡的東西，再配以一杯啤酒，滿足口舌之餘但暑氣全消。而咸蛋黃呢？ 經常用於大蝦、豆角、魚皮等等，帶一種獨特的咸香味，使人想一食再食。</p>
<p>上星期在街市買來3隻雞脾，本想用來做檸汁雞排，但突然又掛住咸蛋的味道，也沒有時間去自製，唯有再買來兩隻現成咸蛋黃，用來做黃金炸雞啦！</p>

<p>材料： 雞脾3隻、咸蛋黃2隻、蔥花適量</p>
<p>醃料：生抽1湯匙、魚露1茶匙、糖少許、鹽少許、麻油半茶匙、生抽1茶匙</p>
<p>炸粉： 生粉適量、油適量<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/08/img_7612.jpg" class="size-full wp-image-3054" width="3024" height="4032"></p>
<p>步驟：</p>
<ol>
<li>雞脾起骨去皮後切成大件後以醃料醃最少30分鐘</li>
<li>雞塊沾滿生粉，沾上生油，放氣炸鍋以200度炸8-10 分鐘至金黃<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/08/img_7613.jpg" class="size-full wp-image-3056" width="3024" height="4032"></li>
<li>咸蛋取蛋黃蒸10分鐘至熟，壓爛</li>

<p>步驟：</p>
<ol>咸蛋黃蒸20分鐘至熟後壓碎</ol>
<ol>中蝦洗淨，去腳及蝦鬚，去腸後抹乾</ol>
<ol>在鍋中加入油燒熱後放蝦入內，兩邊煎香後夾出<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2122.jpg" class="size-full"></ol>
<ol>倒起油，加入牛油煮融用，放入咸蛋黃炒香至起泡</ol>
<ol>加入少許糖吊味（也試一試味，看看夠唔夠咸）</ol>
<ol>放入中蝦炒一會後，關火加入蔥花即成！</ol>

										<content:encoded><![CDATA[<p>中國人都愛用咸蛋黃煮餸，通常會買街市的咸蛋，但品質是怎樣真係沒有保證😔😔，現在好多朋友都會自己整咸蛋，但所需時間頗長，要30-40天，加上通常都只用咸蛋黃，所以自製一d都唔化算！最近在Facebook 見朋友教整簡易咸蛋黃，只要一個晚上，就能整到金黃漏油的咸蛋黃！零失敗的方法，可用雞蛋、鴨蛋，當然是靚蛋！😀😀😀😍鹽就可以選海鹽，食得放心好多呢！<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2131-2.jpg" class="size-full"></p>
<p>‼️註： 今次我跟朋友的做法把蛋黃留殻中！有朋友提醒留殻可能會有化學作用，所以下次我都會取出蛋黃放容器中先加鹽醃，大家要注意啊😊😊😊</p>
<p>材料：咸蛋3隻、鹽適量</p>
<p>步驟：</p>

<li>第一天晚上，鴨蛋分開蛋白（要盡量瀝清蛋白）和蛋黃，只要蛋黃(今次我跟朋友做法把蛋黃留在殻中，另一朋友提醒最好取出蛋黃放容器中，因驚有化學作用！大家留意下😀😀😀）<img src="https://daphnekitchen.files.wordpress.com/2018/12/img_2128.jpg" class="size-full"></li>
