<p>材料：香茅4枝（只要根部位置）、檸檬葉4塊、泰式矮瓜仔6個 、豬軟骨半斤（跑活水及洗淨）6.元茜腳6條（洗淨及用小刀削去黃色表皮）</p>

<p>紅咖哩醬：1.紅咖哩醬70g 2. 蝦醬(1湯匙）3.椰糖（3-4茶匙）4.椰奶（細罐的約半罐）5.水（20ml) 6.魚露(1湯匙）7.油（1湯匙）</p>

<p>步驟：</p>
<ol>
<li>豬軟骨用跑活水方法洗淨，即係約排骨放在室溫水中，煲至滾就熄火、然後用水喉水沖洗乾淨雜質</li>
<li>香草材料先洗淨浸再加入鹽的水中</li>
<li>泰式小矮瓜切半，檢查裏面是否有蟲，然後放在水裏以防止變色</li>
<li>燒一鍋水，大滾後加入青檸汁及鹽，把小矮瓜滾一滾，以保持青綠色<img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/09/img_9893.jpg" class="size-full wp-image-753" height="4032" width="3024"></li>
<li>香茅、莞茜腳用刀背拍爛（記住是拍爛不是用刀切開一條條）</li>
<li>檸檬葉去除葉中間版的位置然後撕碎</li>
<li>調好紅咖喱醬，放入鍋裏與豬軟骨及香草拌勻（在此階段不要下泰式矮瓜仔）<img loading="lazy" src="http://daphnema.kitchen/wp-content/uploads/2018/09/img_9891.jpg" class="size-full wp-image-752" height="4032" width="3024"></li>

<li>豬軟骨煮好後加入新鮮的檸檬葉及莞茜</li>

<p>*煮咖喱是不要時常攪拌咖喱，因為把太多空氣攪入會影響咖喱的味道</p>
<p>* 咖喱煮了一個小時後，可試味看看味道是否需要微調</p>

										<content:encoded><![CDATA[<p>忙碌既星期日，要幫阿囡溫書👀，原本打算慰勞下自已，整個龍蝦伊麵歎下，點知龍蝦又細又貴😒，咁就算啦，買阿囡鐘意既龍躉魚吧！😍返到家突然想食紅咖哩，雖然無晒香茅，但就用僅有的mix and match,整個紅咖哩龍躉魚吧！20分鐘有得食！忙中都可以對自己好d既！</p>

<p>材料：龍躉魚塊（或任何白身魚塊）適量、蔥數條、莞茜少許、南薑3片、蒜頭5-6瓣、檸檬葉2塊</p>
<p>調味：紅咖哩醬1湯匙、魚露2湯匙、椰汁200ml、椰糖少許</p>
<p>步驟：</p>
<ol>
<li>龍躉魚洗淨切厚片</li>
</ol>
<ol>
<li>蒜頭切粒、莞茜根去皮略盅、蔥只要深綠部份切段、檸檬葉切絲</li>
