<p>經過相熟嘅海鮮檔，老闆娘游說我買一隻新鮮游水嘅野生八爪魚。其實我係幾鍾意食八爪魚嘅，不過成兩斤幾嘅八爪魚，一次過真係食唔晒！所以今次用咗涼拌嘅方法，仲好方便同朋友分享添😊😊分享八爪魚，分享膽固醇😎😎</p>

<p>材料：新鮮八爪魚一隻</p>



<p>洗八爪魚材料：白醋兩至三湯匙、鹽適量</p>



<p>磯煮柚子醋材料： 昆布一小塊、柚子醋一湯匙、日本豉油15 ml、鰹魚汁10ml、清酒30ml、味醂25ml、水20-30ml、糖少許</p>



<p>其他：冰塊適量</p>

<p>2. 用洗八爪魚材料洗乾淨（滑潺潺即係未洗乾淨）</p>

<p>4. 把八爪魚放進滾水中，代水再煮滾後，熄火蓋上蓋子焗10分鐘至熟</p>

<p>5. 把磯煮柚子醋汁放在小鍋中煮滾試味至合適，放涼備用</p>

<p>6. 取出八爪魚放進冰水中急速降溫，瀝乾水份後放進柚子醋汁中浸一個晚上</p>

										<content:encoded><![CDATA[<p>今日到街市買海鮮，本只想買海膽及鮑魚，但見到八爪魚居然賣得好平！心思思又想做實驗，買來一隻細細的，還未有煮意，買了才算🤣（其實常常都是這樣的買了回家才慢慢想如何製作🤣🤣）</p>
<p>煮八爪魚最麻煩就是要去潺，滑滑黏手的潺多得嚇人！左想右想決定來一個中泰fusion! 用上香茅、莞茜根、魚露、蠔油、生抽及冬菇，以慢火煮一會後關火焗熟。八爪魚不會變堅，口感QQ，醬料及香草帶出八爪魚的鮮味，凍食尤佳，宴客時作為頭盤也不錯啊！<img src="file:///var/mobile/Containers/Data/Application/12AA77BD-9991-49F9-A3E6-62636BF88659/Library/Caches/Media/thumbnail-p2052-2436x2436.jpeg" class="size-full" data-wp_upload_id="x-coredata://22CCB28C-9F95-4B02-96E6-3654B094FE3C/Media/p2052"></p>
<p>材料：八爪魚一隻、香茅1-2枝（略拍切段）、莞茜根3-4 根（略拍）、冬菇1-2隻（浸軟切片）、冰水</p>
<p>調味：蠔油1-2湯匙、生抽2-3湯匙、魚露1/2湯匙、水適量（以蓋過八爪魚為合）</p>
<p>步驟：</p>
<ol>
<li>劏好八爪魚，去掉內藏、墨囊、眼及墨魚嘴</li>

<li>煲一鍋水，滾起後放八爪魚進去，汆水10秒左右</li>
<li>盛起八爪魚，洗淨備用</li>

										<content:encoded><![CDATA[<p>天氣開始變暖，又到墨魚魷魚八爪魚的季節了。今天在街市買一隻兩斤左右的新鮮八爪魚。在海鮮檔已請魚販代為處理，我是回到家後八爪魚的爪還是一直在動，非常新鮮。</p>
<p>這麼新鮮的八爪魚最好吃，但我家的人都吃很少，所以一次是吃不完啊，於是決定用磯煮的形式，慢慢煮。鰹魚及昆布的味道慢慢滲進爪瓜魚裡，加上八爪魚的鮮味，作為餐前小吃是不錯的選擇吧！</p>
<p>另外，我家的清酒剛好用完，沒有時間去買，所以用了白酒來煮，味道也很不錯呢😄<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_9079.jpg" class="size-full wp-image-1741" width="4032" height="3024"></p>
<p>《樂思廚海鮮食譜-磯煮新鮮八爪魚》</p>
<p>材料：八爪魚一隻<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2019/03/img_9074.jpg" class="size-full wp-image-1742" width="3024" height="4032"></p>
<p>汁料：昆布一小塊、白酒200ml、味醂1湯匙、日本豉油4湯匙、蠔油1湯匙、黑糖1湯匙</p>
<p>步驟：</p>
