<p>話說上次有位熟客，試過我整嘅蝦膠蓮藕餅之後就同我講話佢曾經係一間酒店食過好好食嘅蓮藕餅，不過就係用鹹魚豬肉整嘅！用半煎炸方式來做嘅鹹魚豬肉蓮藕餅，香口非常，加咗蓮藕喺入邊減少左油膩感。</p>



<p>對於客人嘅口述，今日就試吓整！其實鹹魚豬肉餅係我媽咪嘅手本名菜，細細個嘅時候就食好多啦，不過加入蓮藕落去整都係第一次，估唔到效果真係唔錯。只需要三種材料，就可以做到令人垂涎欲滴嘅蓮藕餅！大家宴客嘅時候不妨試吓做喎，賣相都OK呀！</p>

										<content:encoded><![CDATA[<p>小時候很喜歡跟媽媽到街市買東西，但最害怕的是買魚及魷魚，因為魚兒會動來動去，仲有膠袋有魚腥味，所以小時候的我不會主動幫媽媽拎魚。而魷魚呢，通常都是冰鮮的，不會動來動去，但卻有很多黑色的墨，因害怕弄髒衣服，所以也不會主動幫媽媽拿魷魚。但是卻十分喜歡吃。</p>
<p>今天經過街市，見到有非常新鮮的魷魚筒賣，馬上買來一斤。再度豬肉檔買來新鮮的梅頭豬肉，回家就製作一道的豬肉釀魷魚筒。</p>
<p>我猜想大家都會懂得做剁豬肉，但是把豬肉樣在魷魚筒裏，魷魚的鮮味使豬肉更好味，大家不妨試試做呀！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_2959.jpg" class="size-full wp-image-5528" width="3297" height="3024"></p>
<p>材料：魷魚筒一斤（約11至12隻）、梅頭豬肉$35、冬菇三隻（浸軟洗淨）</p>
<p>豬肉調味料：生抽一湯匙、魚露一茶匙、椰糖一茶匙、麻油少許、生粉適量、生油適量</p>
<p>汁料：蠔油兩茶匙、生抽一湯匙、水少許、椰糖少許、三份水適量<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_2955.jpg" class="size-full wp-image-5529" width="4032" height="3024"></p>
<p>其他：牙籤11至12支</p>
<p>步驟：</p>

										<content:encoded><![CDATA[<p>大家都知道我很喜歡烹飪，海鮮是我的最愛，但是除了肉食之外，我也十分喜歡喝湯。以前還和爸媽妹妹一起居住時，在下午無所事事的時候，有時會煲一煲靚湯做下午茶。羅宋湯啦、佛手瓜湯啦、西洋菜湯啦、蜜瓜螺頭湯啦、青紅蘿蔔湯啦&#8230;&#8230;而這款椰子竹絲雞湯，可說是我最喜歡的湯水之一。湯底一點甜甜的椰子味、也有非常清甜的竹絲雞味，加了紅棗來煲，還添加了獨特的紅棗香味。今天就煲來一家人喝喝，大家都很喜歡呢！</p>

<p>材料：竹絲雞一隻（去皮）、椰子一個（取出椰汁備用及把椰子切幼絲）、紅蘿蔔一個（切件）、瑤柱適量、蜜棗兩粒、紅棗四粒（去核剪開）、瘦肉適量（可省）（如不加瘦肉可+1點栗子及腰果）<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/02/img_2861.jpg" class="size-full wp-image-5523" width="4032" height="3024"></p>

										<content:encoded><![CDATA[<p>童年時過年，爸爸總會問我們：「想要吃甚麼？」，我的首選除了是炸子雞外，就是茄汁大蝦。爸爸的茄汁大蝦用上大大隻的海蝦，蝦殼炸得香脆，入口脆卜卜，而精華呢，則在於醬汁，甜甜酸酸的醬汁，用上新鮮檸檬，非常清新！今年過年時，買到非常大隻的野生海蝦，就用來製作一下茄汁大蝦，回憶一下童年吧！<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/01/img_1678.jpg" class="size-full wp-image-5481" width="3024" height="4032"></p>
<p>材料：海大蝦6隻、紅蔥頭5-6粒（切幼絲）、蔥花適量</p>
<p>汁料： 茄汁3湯匙、椰糖3-4茶匙（自行加減）、蘋果醋1茶匙、檸檬汁1茶匙、喼汁半茶匙、水少許<img loading="lazy" src="https://daphnema.kitchen/wp-content/uploads/2020/01/img_1680.jpg" class="size-full wp-image-5482" width="4032" height="3024"></p>
<p>步驟：</p>
<p>1. 海蝦洗淨，剪去蝦頭眼後位置，取出沙囊，剪去腳及鬚，抹乾備用</p>

										<content:encoded><![CDATA[<p>中菜有很多不同的醬料和醃製食物，小時候媽媽有時偷懶，會給我們腐乳加糖佐飯吃，也會有時以薑蔥蒸一件鹹魚就當餸。雖然這兩種食物都不大健康，但間中仍感到十分美味。</p>
<p>而在眾多醬料當中，我最喜歡的是南乳，他比起腐乳多了一點點的酒香味，用來炆煮食物，使食物更為惹味、更有層次。</p>
<p>今天在街市買到了非常新鮮的鴨。雖然是冰鮮，但是外皮白白滑滑很飽滿。一想就是以薑蔥南乳來炆煮。</p>
<p>在銅鑼灣有名腐乳店買的南乳，色澤紅潤,未煮已聞到好香！加上蔥段及薑片炆煮，大人小朋友都很喜歡呢！<img src="placeholder://"></p>
<p>《惹味薑蔥南乳炆鴨-2人份》</p>
<p>材料：冰鮮鴨半隻、薑片三片、蔥段適量、紅蔥頭及蒜頭各3粒</p>
<p>調味料：南乳3/4磚、椰糖半湯匙、水100ml、生抽少許、花雕酒少許</p>

<ol>
<li>冰鮮鴨斬件後去毛洗淨及抹干</li>
<li>蔥切段、蒜頭及紅蔥頭去皮</li>

<li>以中慢火炆40分鐘</li>
<li>試味後以大火收乾汁料，加入青蔥段略炒即成</li>

<li>先以薑爆香鴨件再以酒及白醋注入能去除鴨腥及羶味</li>
<li>鴨件回鍋時以食物夾夾入鍋中，不要倒入以免把血水（有腥味的！）也注入鍋中</li>
